It was a dark and stormy night…

Yesterday my DH and I had grand plans of making dinner on the grill, but we were greeted by dark clouds and lightening. We decided to go for plan B.  Usually, I love to order or make Chinese food.  But when my husband suggested taco’s I was on board. I think what it comes down to it I crave something warm and savory when it’s gloomy.

What types of food you crave and cook on rainy days?


We’re expecting rain this weekend- so I’m looking for cooking project to keep me busy. I found plenty of inspiration in this week’s blogosphere. I’m sure I’ll make plenty of warm and savory things… but I can’t forget about my sweet tooth.

I’m sure I will not have motivation to head to my favorite Swedish Bakery for sweets, so these homemade cake doughnuts sound delicious.

Isn't it amazing how qauickly the weather turns on us?  Yesterday it was 80 degrees here in otherwise frigid Minnesota and today it is 56 degrees and raining.  Last week while it was cool and gloomy outside I made the Pineapple Upside Down Cake on the home page.  Tasty.  The next time I make it I'm going to use crushed pineapple instead of rings.  That's the way my mom made it most of the time.  I believe she also used more butter and brown sugar.  Canned apricot halves can be substituted for the pineapple too.  That is the way the school cooks used to make upside-down cake when I was in grade school.  I may need to get a chocolate cake mix and frosting and bake cupcakes.  I'll need marshmallow creme too as I would like to make filled cupcakes.  Injecting marshmallow creme into the center of cooled cupcakes is so good and easier than making the filling from scratch.  We've been known to make a little white icing and piping it in a swirl pattern (seven loops) on the frosted, filled cupcakes.  We will be having birthday cake this Saturday to celebrate my grand-niece's third birthday.  That may take care of my carb craving.  Might not.  Have a great day!

Haha... the silly carb craving is sometimes stronger than the sweet tooth.

I like where you are going with the Pineapple Upside Down Cake and the Marshmallow Cupcakes. MmmM. Enjoy the birthday party- hopefully the sun will peak out for you.

Last week it hit 95 here & then it went to 60 two days later.  Stayed cool, so yesterday I made a big pan of BBQ'd meatballs, scallopped potatoes, and cole slaw.  It was yummy!  Also made a Butter Pecan cake for dessert.  It wasn't bad either.  Whenever it's chilly & damp outside, it's time for the carbs to come out!  They stay with you better in the cold, I think.
