Fruit Infused Dishes!

I’ve been doing a great job sticking to my New Year’s resolution of eating more fresh fruits and vegetables. I especially love baking with fruit because it gives my creations a sweet touch that traditional sweeteners can’t provide.

I make Orange Chicken from a cookbook called "Eat What You Love".    This book is full of lower-fat, lower-sugar recipes.  I also make cobblers and crisps for desserts.

Having 2 toddlers makes me creative at this type of thing!  Not that they have a problem eating fruit!  I use fruits as a topping for pancakes- cut up some bananas or blueberries...even addition into the batter if I remember!  There are alot of fruit muffins in the house, like bran blueberry and apple.  I've made mango/avocado salsa for fish.  My son really enjoys avocado, and so I put that in sandwiches and salads.  I add fruit to oatmeal, yogurt....so many things!   There's alot of plain fruit eating here too!

Good for you, we are doing our best with vegetables and fruit too. Lots in soup and the ever present big green salad full of veggies and fruit. Cut up oranges and grapefruit along with chopped nuts. A squeeze of lemon makes everything taste better and gives food a wonderful zing. I always keep on hand jars of chopped dried raisins or dried cranberries that are mixed with chopped almonds. ( I put fruit and nuts in the food processor once a week so I have them on hand.) I sprinkle that mixture on top of our oatmeal in place of any sweetners and we think it works very well. ( Old Fashioned Oatmeal from the box, not instant. ) In the winter, even in California ,comfort food is always welcome so I cook lots of soup with lots of veggies. Stay warm and stay healthy !

I have horrible eaters around my house, but when we do pizza, I make the sauce and add a salad on the side.  I also juice oranges and lemons to make homemade lemonade and orangeade.  I have to strain it cause the kids hate pulp.  I do make a potato soup that I use cauliflower in ( no one knows) to thicken it.  I also make tomato soup that the kids will actually eat.  My husband and I love love love edamame, we have it at least twice a week.

 I love to make my own peanut butter/carmel dip for apples. I also mix 2-3 cups of fresh or canned fruit with one box of instant pudding mix (dry) and let it set 15-30 minutes, very good! I to put fruit in pancake mix. I also make my own fruit syrup by adding 1 c. of fruit to 2 c. white corn syrup, fast & easy., just heat the syrup then add fruit and simmer about 5 minutes. I have started keep fresh fruit on the table and grabbing a piece instead of chips, ;-)
