Lunch ideas needed!!

Hello:


I need ideas on what to pack for my husband's lunches.  He is on the road daily and has no access to a refridgerator or microwave so everything he takes would be in a cooler.  Any great and creative ideas would be greatly appreciated!

It’s easy to get tired of sandwiches. Sometimes I try to rotate what goes on the sandwiches.  Also, rotate breads. Some days I do a classic wheat bun, other days I may use a tortilla or a pita. I may break the day days down like this:

Monday: Egg Salad,
Tuesday: Peanut Butter and banana,  (i.e http://www.bettycrocker.com/recipes/recipe.aspx?recipeID=34529&Source=SearchResultPage&terms=bag%20lunches)
Wednesday: Tuna Salad
Thursday: Peanut Butter and Jelly
Friday: *Whatever one he likes best! :)

But think there are so many good lunch options. I look forward to hearing members responses!

Finally, get creative with sides. I love red grapes, chopped peaches etc. Sometimes it doesn’t matter what your main is- as long as you keep your sides fresh and creative- it can be fun. i.e. something like fruit kabobs! http://www.bettycrocker.com/recipes/recipe.aspx?recipeID=34402&Source=SearchResultPage&terms=fruit%20kabobs

Hi Heyler7, I have been away from the boards for a while and just got back today.  Hope you have used CateC's ideas.  She has some good ones.  Maybe I can throw in one or two more.


If your husband can carry a cooler, then chop up a fruit salad using any combination of fresh and canned fruits.  Crushed pineapple, chopped apple, chunks of oranges, peaches, strawberries, etc.  Any combination and any anmount.  You may need to add a little"Fruit Fresh" to keep apples, bananas,etc. from turning brown.  Use as is, or add a little sweetner or sugar if needed.  You can also fold in vanilla yogurt.


Also, leftovers are great.  Try using leftover fish and making a fish sandwich.  On bread or a bun with tarter sauce, lettuce,  cheese.  Leftover pizza was always a winner with my kids.  Then you can always make leftover steak sandwiches, topping off any way you like-pickles, miracle whip, etc.


In hot summer, pack low fat cheese, crackers with some fresh chopped veggies such as tomatoes, cucumbers, and bell pepper and add a piece or two of fruit. 


Try boiled/deviled eggs. And as a side dish, add potatoe salad made with fat free Italian salad dressing instead of mayo.


Lean ham and chicken can be used in a variety of ways besides on a sandwich.

Thank you, Cate-C.  Dispite being in the hospital twice, my computer died (had a BAD virus) and I buried it, .  So finally bought a new one and had trouble reestablishing my on-line stuff (I am SOO computer dumb).  Anyway, I really missed surfing your message boards.  I love reading about everyone and what they are up to.  Love to all-ldbayou
