Creamed corn casserole recipe

Hello to everyone from Ohio Smile


I am looking for a recipe for a side dish we used to call "creamed corn casserole". It had creamed corn, butter, jiffy cornbread mix, sour cream & that is all I can remember. Then of course,  it was put in the oven at about 350 degrees to cook. Hope someone has heard of this or something similiar. Would like to make it for my family. This is one I use a lot, I hope it's the one you're looking for.  It's really good and always a hit at my house.



1 can whole kernel corn, drained
1 can creamed corn
2 eggs, beaten
1 box Jiffy corn muffin mix
1 stick butter, melted (or 1/2 c. oil)
1 c. sour cream
1/4 - 1/2 tsp. garlic powder (opt.)
Shredded cheese (opt.)


Mix all ingredients except cheese. Sprinkle shredded cheese on top, if desired. Bake in casserole dish or 9"x13" baking dish for 30 to 45 minutes or until fully cooked in center.

I moved out of state and was not able to bring my cookbooks and recipe files.  (in storage)


This casserole is one of my many side dishes for Thanksgiving.

Jiffy Corn Muffin Mix Copycat Using Bisquick

 

This recipe is equal to an 8.5 ounce box of Jiffy Corn Muffin Mix. 

When another recipe calls for a box of JIffy Corn Muffin Mix, use the mixed dry ingredients from this recipe as a substitute. 

This is a very easy copycat recipe because it uses Bisquick. Store any unused dry mix in an airtight container.

Makes 6 muffins or equals One 8.5 oz box of Jiffy Corn Muffin Mix for another recipe.

 

Ingredients

2/3 cup Bisquick baking mix

1/2 cup yellow cornmeal

3 tablespoons granulated sugar


1/3 cup milk

1 egg

 

Directions

1. Using whisk, mix dry ingredients in mixing bowl.

2. Use above mixed dry ingredients in recipes calling for a box of Jiffy Corn Muffin Mix.

3. If making corn muffins. Continue with step 4.

4. Preheat oven to 400-F.

5. Stir in milk and egg. Stir until lumps are gone.

6. Fill standard muffin cups half full.

7. Bake 15-20 minutes or until muffin tops are slightly browned.

8. Makes 6 muffins.

 

Those who forget the pasta are condemned to reheat it.

I also want to thank you for posting this. I'm actually from Ohio as well. My aunt makes this every year and this year I'm not going back to Ohio for thanksgiving. I was trying to remember what was traditionally served at our house and I thought of this but had no idea what it was called or how to make it. This is exactly what i was looking for. Thank you and Happy Thanksgiving to all of you!!
