Cod & Shrimp got any ideas?

Hi, I was wondering if there is anybody who has any cod and/or shrimp recipes. I would appreciate any help I can get. I have never fixed cod but would like to try it. Thanks

Hello kentuckygirl26, Fish is great to fix, but easy to over cook.  To fry, I like to cut into serving size pieces, rub each with ranch dressing and sprinkle lightly with garlic powder, and lemon-pepper ( I use the no-salt variety), and marinate for 30 minutes.  Then coat each with corn meal and deep fry in pot of hot oil till it floats and is goldern  brown.  Remove IMMEDIATELY, and drain on paper towels.  The ranch dressing is GREAT and I learned that from my Mom who has always been one heck of a great cook.  I"ll never measure up.


To bake, you can use a little olive oil to brush each piece with and then season with garlic powder and lemon-pepper. Other seasonings could be Caribean jerk or Creole.  Some people use Italian salad dressing to brush with and bake.  Try a 375 degree oven and cook till it turns white and flakes.  Do not over cook.  Probably about 10 to 15 mins max.


I love to saute my peeled shrimp in butter with fresh minced garlic and can add a little white wine to make a scampi.  Add a little parsley also.  Be creative and look in your spice rack.  You might try making a shrimp salad.  Just boil your shrimp in the shell.  I put  a little garlic (as you can tell, I love garlic) and pickling spice in the water as it boils for a delicious delicate flavor.  Boil only 3 to 5 minutes.  SHRIMP OVER COOKS QUICK !!  Peel and add to your favorite salad or chill and eat with cocktail sauce.  Enjoy! ldbayou

Hello ldbayou, I appreciate the ideas I will give them a try. I also like garlic but my kids don't if I fix something that I use garlic in I leave it out of their's. I also like foods that are spicy, so I try to fix the same thing but in two different ways. Once again Thank You for the ideas. kentuckygirl26

Idbayou: I agree- Ranch and Fish are a fine compliment. :)

This is a recipe my hubby and make often. It's made with fish sticks (which happens to be cod- but any fish will do)

Cook your fish as you normally do. Why the fish is cooking- take a medium-mixing bowl out. Add 1/2 bag of dry coleslaw, a handful of fresh cilantro (washed), a couple tablespoons limejuice, and a couple tablespoons of mayo, one large tomato (diced), and a chopped avocado. Mix. Add a little sea salt and pepper.

Warm up some wheat tortillas. Add coleslaw mix and top with cooked fish.

It’s so easy; it’s fresh, filling (and delicious!)  Hope this helps!

Hi CateC-I think that would be delicious. I have a good hispanic friend who told of a similar recipe her and her husband fix. They call it fish tacos. They bake any white fish and use it. I have not tried it yet but am going to. Sounds awesome. They sprinkle garlic powder on the fish and cole slaw, of course. Kentucky girl, let me know how your fish turns out. Hey idbayou-  I love to triple the gralic when I can... I don't know why I never thought of that! Smart!  I will for sure try that nex time.

Thanks for sending that cole slaw idea!  I was just thinking of slaw today and I LOVE cilantro, so I may have to try it tonight.

My kids don't like fish except fish sticks, so I make those for them sometimes if we're having the baked fish.

Hi ldbayou. I tried the recipe that called for ranch dressing and garlic powder. I left out the lemon pepper cause I didn't have any on hand. It turned out really good. I also baked it. Thank You for the ideas. I also use ranch dressing for chicen sometimes. I mix the dressing with some buttermilk and let it sit for about 2- hrs. in the refrigerator and bake after dipping into a breadcrumb mix.

 

Hi CateC. I tried the Spicy Cornmeal Cod recipe and it turned out good as well. I fixed some rice as a side dish using butter and garlic and fixed some fried cornbread and the meal was complete it was really good. For the leftovers I made the fish tacos that you was talking about they were really good. Thank You as well for the ideas.

These ideas worked out real good cause my kids wouldn't try it so it was a good way for me to try something different on a night when we had the usual spagetti or somethig else that I have just gotten tired of eating. With these I could make just a few and put up leftover's for next day's lunch.

If you know of any more simple meals for one or two people would you care to let me know.

It made me laugh when you mentioned your kids wouldn't eat it. When my dad first made fish tacos I wanted to refuse. Ew I thought! 

I took one bite (to be polite) and then realized I loved it! For some reason- when you start off with fish sticks (or a fish you know they love)- kids are less likely to be "grossed out".

Hello. This recipe is rather easy to make. The key to tender shrimp though is to be sure not to overcook it. If  you  do they become rubbery and impossible to chew. Good luck and happy eating.
RED LOBSTER SHRIMP PASTA
1/3 C. olive oil
3 cloves garlic, minced
1 lb. shrimp, peeled, deveined and remove tails
2/3 C. clam juice or chicken broth
1/3 C. dry white wine
1 C. heavy cream
1/2 C. freshly grated Parmesan cheese
2 Tbsp. each lemon juice and chopped parsley
1/4 tsp. each dried basil leaves and dried oregano leaves, crushed
1 package linguine pasta (8 ounces) cooked and drained


Heat oil in large skillet over medium-high heat. Add garlic; reduce heat to low. Simmer until garlic is tender. Add shrimp in same skillet and cook over medium-low heat until opaque. Remove; reserve liquid in pan. Add clam juice (I use the chicken broth when I'm out of clam juice); bring to a boil. Add wine; cook over medium-high heat 3 minutes, stirring constantly. Reduce heat to low; add cream, stirring constantly. Add cheese; stir until smooth. Cook until thickened.
Add shrimp to sauce. Heat through. Add remaining except linguine. Pour over linguine in large bowl; toss gently to coat. Serve with additional grated Parmesan cheese, if desired. Makes 6 servings.

High Kentuckygirl26, I have a cod recipe that my wife and I enjoy, we don't eat much shrimp.


Fresh Cod with Drawn Butter - (Poor Man's Lobster)


1½-pounds cod fillets, ¼-cup lemon juice, 1 teaspoon salt, 1 bay leaf, 2 slices onion, 2 peppercorns.


1. In a large skillet, bring 1½-inches water to a boil. Carefully lower fillets into water in a single layer. Add remaing ingredients.


2. Cover and simmer for about 3 to 5 minutes, or until fish flakes easily, depending on the thickness of the fillets.


3. Garnish with lemon slices and serve with drawn butter.


 


I have another recipe that we like, as a matter of fact it came out of Betty Crocker's Best recipes of the Year Cookbook. Lemon Baked Cod


1 pound cod fillets, ¼-cup butter or margarine, 2 tablespoons lemon juice, ¼-cup all purpose flour, ½-teaspoon salt, 1/8 teaspoon white pepper.


1. If the fillets are large, cut into serving pieces. Mix melted butter and lemon juice. In another bowl, mix Flour, salt and white pepper.


2. Dip fish in butter mixture; coat fish with flour mixture. Place fish in ungreased square baking dish 8x8x2-inches. Pour remaining butter mixture over fish; sprinkle with paprika.


3. Bake uncovered in 350° F. oven until fish flakes easily with a fork, 25 to 30 minutes. Garnish with parsley sprigs and lemon slices, if desired.


That's the way the recipe is written in the cookbook. I prefer not to use the flour mixture, I use one stick of melted butter and ½-cup lemon juice, pour butter mixture over the fish, sprinkle with salt, white pepper, paprika and bake as directed.

Hi kentuckygirl26--


We are fairly new to making fish at all but have made some delicious tuna steaks on the grill.  Just add a little olive oil and dill or a combination of seasonings like a rub, but just sprinkle on them, and watch them closely.  They are very good eaten rare and not fishy tasting.


For indoors we buy frozen tilapia--you can do same method with cod.  Lightly grease a cookie sheet, lay out as many pieces of fish as you can eat, then I put on olive oil or butter or spray on I Can't Believe It's Not Butter, then I do a light sprinkling of a spice mixture that has garlic salt and some herbs in it.  Bake them for about 10-15 minutes at 350.  Once you've made fish a few times you can tell the temperature that works best for you, and you'll see how fast they get done.  They can quickly go from perfect to dried out so watch them.  I have even done this with frozen fish, and just watch them carefully, but obviously that is when we're in a real hurry.


I also sometimes melt a stick of butter, then add lemon juice and some capers (1-2 teaspoons, or more if you love them).  That "sauce" is good over fish.


I don't cook shrimp at home--I buy it and eat the shrimp cocktails but very seldom.

Hi karenlynn2002. Thanks for the shrimp pasta recipe. I tried it and I liked it. I left out the white wine cause I didn't have any. I think it urned out good though. I usually don't fix that kind of food but I decided to try some different things.


Hi modestcook. Thanks for the recipe for "Poor Man's Lobster". It turned out good as well. I fixed it for supper tonight while the kids had pizza. I usually don't fix shrimp either but I was ready for a change from the usual.


Hi magnets704. Thanks for the fish ideas. I will give them a try. I really like the fish tacos using the spicy cornmeal cod recipe that is on the betty crocker web site it added an extra kick to the flavor of the coleslaw.


Once again thanks everybody for the wonderful ideas. If I haven't tried them yet i'm sure I will.
