Homemade Hash Browns

Hi there!  I have a bag of Idaho potatoes, that I can't use fast enough before they start going on me.  I'd love to learn how to make hash browns out of them.  What I('d like to do is make a batch during the day when my husband is working, and then the next morning, instead of his usual eggs and ham, I'd like to serve him hash browns with it.  I know it's not as complicated as I'm making it in my head, but I jyst don't seem to be able to figure it out! Hmm Can anyone help?  I'd like to keep it as simple as possible as my husband has stomach problems, so nothing spicy, please! Thanks again!

Hi! What I do is microwave the taters (poke holes and cover with paper towel) and then when they are done, I wrap them in foil.  Then whenever I want, I take them out of the fridge and just slice them up with skins (if you like the skins) and a little olive oil and smidge of butter, onions if you like, and just fry them up. They are quick because they are already cooked and my family loves them.  We called them American fried when we were growing up.  They are great to have on hand and no more tater trees! ;-)

Yes!  Thanks to both of you for the great suggestions!  It never occured to me to cook them first then try to save them in the fridge.  What a losing battle! Thanks again!

Hi,  I like to boil my potatoes first, and let them cool overnight in the fridge.  Then get the grater out and grate them on the larger side.  Next I would make a "patty" out of the grated potato, and fry it in a little butter or until it is golden brown on both sides.  You can also add some chopped onions and green peppers in with the potato if you like.  I worked in a restaraunt for a while as a cook.  We would also use the leftover baked potatoes from the night before.  You can make them ahead of time and just reheat them in the morning. I hope this helps.

Hi Chicago Singer: Forgive me, I know this is late- but I still wanted to post. 

So, do you have a grater in the house? After you peal them, I would use a grater and coarsely shred them . Rinse the shredded potatoes and pat dry well with paper towels - or dry in a salad-spinner. From there you start adding your butter, salt, pepper… whatever you want to make your new meal. 

My grandmother would make it like how missmysiskc mentioned- and then fry up some type of chopped lunch meat (often Bologna sausage) and onions and serve on top of the potato mix.
