Cancer Recovering

Hi everyone, My name is Cindy and I'm recovering from lung cancer.Last few years have been really rough for me, lost my mother in April of 2006, found out about my cancer in June 2006, plus  hubby found out he has  diabetes, lost my son in March of 2007, plus and  last I had a stroke in  Dec. 2007. So  easy very easy recipes for  all dishes is a  must. I cook just for  my husband and  myself most of the time. So any help would be  great. I entered my cookie recipe Sugar Pizazz! you can't get any easier than that recipe.Smile Thanks for your ear. Cindy

Welcome to the Message Boards, Cynnthia.

Gosh, I don't know what to say.  I hope you have wonderful friends and family around you.

Have you checked out the recipes in the Dinner Made Easy section here http://www.bettycrocker.com/cooking/dinner-made-easy/ - they also have a Dinner Made Easy Newsletter you can sign up for.

I was wandering around and found this recipe for Ranch Chicken that looks fast and easy: http://www.bettycrocker.com/Recipes/Recipe.aspx?recipeId=35723

If you and your husband like rice I usually cook enough so I can have three meals from each batch I cook.  Fried rice is always a quick meal for me but I love rice plain as well.

The same with potatoes.  I will bake patatoes and then make either twice baked potates or fried potatoes with the leftovers.  I can also use boiled potatoes for mashed or fried potatoes.

I also like both a George Foreman Grill and infrared style oven for making fast meals.  (AND I can usually get my husband to grill for me - I think it is something about fire and guys that makes that work. Big Smile)

Hi Cindy,

My name is Char. I'm a cancer recoveree (misspelled but oh well) I'm 48 years old. I first had colon cancer at 24. They did a partial section surgery then. It came back when I was 26. I now have a illeostomy. I have what they call FAP ( familial adenomatous polyposis ). It is very hereditary. My Mom and her brother died in 1981 one week apart to the day. My Dad passed away in 1981 too. He was a firefighter and died in the line of duty. My parents died about 8 months apart.  Both of my girls have it. They have lost all of their large intestine too. Luckily there is now a surgery called The J-Pouch. So they don't have the outer bag like I do. My sister has it and has the same as me. Thank the Good Lord my little brother doen't have the gene for it. We just found out my 6 year old granddaughter has it. She has her first scope in April to see if she has polyps yet. The diease can show up anywhere in your digestive tract. I have polyps in the bile duct to my liver. They are inoperateable. So it's a wait and see game now. I have Short Gut Syndrome ( from too much small intestine removed ), Pancreatis and Chronic Liver probelms. My heart goes out to you with all you are going through and have been through. My 2 Mottos in life are: 1) Live your life to the fullest it's the only one you have and 2) Don't sweat the small stuff it's not worth it and life is too short. You are and will be in my thoughts and prayers. I don't feel well 90% of the time so I do alot of Crockpot cooking or 1 pan cooking in the oven. It's easy to put together and clean up is also easy. I cook for my husband, my 6 year old granddaughter ( which we have guardianship of; my daughter can't handle it ) and me. God Bless You and Take Care.
