What makes your Macaroni and Cheese special?

Did you know that Macaroni and Cheese is the number one cheese recipe in the United States? In any given 12-week period, about half of all U.S. children will eat this delectable dish. Wow! (According to: http://mymacaroniandcheese.info/15-fun-facts-about-macaroni-and-cheese)

It’s no wonder! Covered in creamy, gooey cheese – noodles never tasted so good! The best part about this classic is how many twists you can put on the recipe to really make it your own.

Betty has a few recipes up her sleeve:

Here’s a classic:

And take a look at what the cheesiest state in the country is doing. Wisconsin Milk Marketing started a blog that spans 30 days, with a new Mac and Cheese recipe each day by some of the most inventive foodie bloggers around! You'll want to keep your eye on this one: http://www.30days30waysmacandcheese.com/

So naturally, with all this mac and cheesy talk, we’re so excited to hear from you!

Tell us what makes YOUR mac and cheese special. Is it a secret family recipe or is it one you developed on your own over the years? Is there an interesting extra ingredient? Or some very special cheese? Or is it the way you put it all together? Please share your macaroni tips and tricks!

i just add some form of chicken (( grilled is best for flavors)) or ham baked or cooked and or one time i used both chicken and ham it made it go longer and feed more people and some times vegatables with them also like mixed or peas or corn

I also put chicken in my mac and cheese, it's the best combo i have found so far.

When cooking the macaroni I either add chicken bouillon to the water or cook them in chickenbroth.

I also like to add some cheeze wiz or a  bit of cheese dip to my macaroni ,which ever I have on hand, This may sound far off but it gives the dish a good flavor. Fried or baked chicken on the side finishes the meal.

In addition to sharp cheddar I use pepper jack cheese in my macaroni & cheese.  I find that the flavor is so much better with the little kick of the pepper.  I also top it with buttered breadcrumbs.

I would never put chicken in my macoroni and cheese! There's plenty of milk and cheese, so it counts as a protein main dish without the meat. I cook it until just done, drain, then put the pot back on the eye, then turn it to low and add milk. When the milk warms, I add butter and flour, stir that gently until it makes a sauce, then put all of it into a greased baking dish. Cover that with the cheese, then cover all of it with either soft or dried seasoned bread crumbs. Bake until bubbly and serve.

I use a combination of cheeses including cottage cheese.  My secret ingedient, though, is nutmeg.  It makes it so special.

I like to use canned (evaporated) milk in mac and cheese.

It makes a real creamy sauce.

I havn't tried to make it myself yet (dinner tomorow night), but we have had it with canned jalepenos and corn.  It was just a nice kick, not to spicy, but very yummy.

I love your ideas about mac and cheese, but most of all I love the quote.  Thanks for the inspiration for the day!!  ~Diana

My recipe comes from my father. Been making it for years and the one thing that makes is special is I add linguica to mine. I cook it first and then drain well. I also use Aunt Penny's White sauce as my base and add med Cheddar to it. Then bake. It is the best!

I make the ole fashion way.  Layer the noodles,

each layer.  Use can milk.  Put together and

Hi Emily, I love mac'n'cheese!Smile. My Mom used to make Kraft's mac'n'cheese, the one with the powder cheese, when I was growing up, I'am 64Smile, it seems like it was "much better then"? She also made it from scratch, from a recipe with goverment commodity cheese and baked it. WOW! was it good.  I have tried to make it but never found a recipe that was as good as hers, it was so cheesey and creamy. My Mom is now 84 and she can't remeber how or for sure were she got the recipe. It would be nice if someone had that recipe, it would of been back in the mid 50's & mid 60's.  Granna2

Hello Grann2,

Were you ever able to find the recipe for the Mac and Cheese like your mom used to make?  If so, maybe you could share.  Thanks, Cecelala

I think one of the things that made your mac & cheese so good was the "goverment cheese".  I also used it and that was the best chees ever!! That was the one thing I missed when I no longer qualified for goverment commidies.

I like the recipe in the Betty Crocker cookbook - except that I mix the cheese with the pasta and then pour the white sauce over it and mix them all together in the pan.  One thing I just tried and loved is the hint from the "How to get your kids to eat more vegetables" book - cook up some cauliflower, puree it (I use a mini food processor), and mix it into the white/cheese sauce.  It has such a light taste that they won't even notice it and it actually makes the whole thing creamier!  This is a good use for the cauliflower stems that nobody seems to like anyway.

Stewed tomatoes are a good side with this dish.

Oooh, great trick Dad_is_a_cook!  Here are some interesting spins on our favorite classic dish …

My husband loves meatballs, we buy the frozen ones to save time.  He would love this Macaroni and Cheese Casserole with Meatballs: http://www.bettycrocker.com/recipes.aspx/macaroni-and-cheese-casserole-with-meatballs/9209421e-a29d-4f5c-9790-1c9041f759a1

And the Impossibly Easy Mac ’n Cheese Pie really is impossibly easy!  I could make this blind-folded:
http://www.bettycrocker.com/recipes.aspx/impossibly-easy-mac-n-cheese-pie/8227b1ea-6c72-4e36-8ab9-9712360230c6

What are your thoughts?  Would you try these?  Have you tried these?  Let me know.

Sincerely, Cate
