When I met my husband he had 2 kids.  He told me they were "picky eaters"  well since we had them every weekend I would have the kids help plan the menu for the next week end.  Shopping was fun I turned it into a scavenger hunt.  Sometimes when making soup we each had to pick a veggie that we had never tried before.  We would look on the charts to see how it should be cooked, almost anything can go in a soup.
Main meals, each would help with something-- and surprise the stuff they helped with they ate and liked.
They both are in their 30's and survived very well.
Remember that it is unusual for a child to starve to death by refusing to eat a portion of a meal.
Best tid bit was a friend of mine.  She had a "rule" in her house " One taste, no face." that got her through many trying meals.
Have fun with the kids.  Also remember what they wont eat today will be a favorite next week.  And whaen they grow up and get married no one will cook as good as they remember your meals tasting.
