Hi! I am new to this, and i am wondering if anyone out there has any awesome gluten-free recipes they would like to share! There are some really good ones on here, but looking to see what other great Ideas everyone has with the new gluten free line of Betty Crocker mixes! Thanks so much for your time!

I sometimes take a regular recipe and just sub out for different types of flours.  Meaning almond flour, oatmeal flour, soy and rice flour.  Some taste nasty and others have a delightful flavor you will have to do this by trial and error but sometimes a nice surprise will happen like when I made some corn muffins instead of biscuits.


I took a biscuit recipe and subbed out the flour for almond flour and corn meal and added in fresh cut corn cheddar cheese and wow what a great muffin sweet and yummy almost like a cake. was just fabulous.  The other flours can be pricey just shop around though cause lots of places will have it much cheaper by the pound. Usually the places that have the bins, you know self serve. If that doesn't work in your area try shopping online.......

Hello, I am also new to this recently been diagnosed with Celiac Disease so i'll be following this thread closely. I just tried the Betty Crocker brownies last night and they ROCK. I am trying to find a good chocolate Muffin recipe for Christmas. I will check out the links in the other post. ~ Kat

My daughter was diagnosed with Celiacs last year.  One of the things she missed most after changing her diet was my rum Cake.  I found most gluten-free cake mixes are very dry and dense.  I have created a recipe for rum cake that is pretty good, but heary.  It does contain trace amounts of cornstarch, but that doesn't appear to bother my daughter.  The recipe is below. In general, I found when using either the gluten-free cake mix or the gluten-free brownie mix, they are moister when I add at least one package of instant pudding.  The pudding helps smooth out the texture of the cake and brownies. 


 


Gluten-Free Rum Cake


 


2 boxes Betty Crocker Gluten-free Yellow Cake Mix


4 boxes Jello-Instant Vanilla Pudding


8 eggs


½ cup Canola Oil


1 ½ cups Bacardi Rum


1 teaspoon gluten-free vanilla


 


Pre-heat over to 350º


 


Mix all the ingredients together until well mixed.


 


Pour batter into a greased fluted cake pan


 


Bake 1 hour
