mint choclate brownies

Hello Everyone,   Its seems that the only time I am here is when I need help.  Well here I go again


I am looking for a brownie recipe that uses cream de menth.  Does anyone remember it.  My neighbor always made this for the holidays and her home burned down several years ago and we can not find anyone with it.


Oh I almost forgot.  how have you weathered the snow storm.   I am in north central michigan and we did pretty good.  only about 6 or 8 inches here but north of us they had tons snow.

Hello, Judithb.  My prayers are with everyone who have had to deal with the frigid and blizzard conditions of the north.  And I am also so sorry to hear of your friend's misfortune.  I went on line and typed in creme de menthe brownies and came up with a passle of websites, which I enjoyed reading.  http://www.foodnetwork.com/recipes/paula-deen/creme-de-menthe-brownies-recipe/index.html  ---sounded really good.  But other sites were, recipezaar.com; cooks.com; southernfood.about.com; and then this one looked pretty good also- http://allrecipes.com/Recipe/Chocolate-Mint-Brownies/Detail.aspx   I hope this may have been some help to you and your friend.  Happy Holidays.

Ingredients

  Brownies
  • package Fudge Brownie Mix
  • 1/2  cup water
  • 1/2  cup oil
  • egg
  •   Filling
  • 1/2  cup margarine or butter, softened
  • (3-oz.) pkg. cream cheese, softened
  • 21/2  cups powdered sugar
  • tablespoons crème de menthe syrup
  •   Green food color, if desired
  Frosting
  • (6-oz.) pkg. (1 cup) semisweet chocolate chips
  • 1/3  cup margarine or butter


Instructions

  1. Heat oven to 350°F. Grease bottom only of 13x9-inch pan. In large bowl, combine all brownie ingredients; beat 50 strokes by hand. Spread in greased pan.
  2. Bake at 350°F. for 31 to 33 minutes or until set. DO NOT OVERBAKE. Cool completely.
  3. In medium bowl, beat 1/2 cup margarine and cream cheese until light and fluffy. Add remaining filling ingredients; beat until smooth. Spread evenly over cooled brownies.
  4. In small saucepan, melt frosting ingredients over low heat until smooth, stirring constantly. Remove from heat; cool 15 minutes. Pour frosting evenly over filling; spread carefully to cover. Refrigerate 1 hour before cutting into bars. Garnish as desired. Store in refrigerator.


Ingredients

  • oz unsweetened baking chocolate
  • cup butter or margarine
  • packages (8 oz each) cream cheese, softened
  • 21/2  cups sugar
  • eggs
  • 1/2  teaspoon peppermint extract
  • 11/2  cups all-purpose flour
  • 1/2  teaspoon salt
  • cups crème de menthe baking chips (from two 10-oz bags)

Instructions

  1. Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening or cooking spray (do not use dark pan). In 3-quart saucepan, heat baking chocolate and butter over low heat, stirring frequently, until melted and smooth. Cool 5 minutes.
  2. Meanwhile, in medium bowl, beat cream cheese, 1/2 cup of the sugar and 1 of the eggs with electric mixer on medium speed until smooth. Set aside.
  3. Into chocolate mixture, stir remaining 2 cups sugar, remaining 4 eggs and the peppermint extract. Stir in flour and salt until well mixed. Spread half of chocolate batter in pan. Drop cream cheese filling by teaspoonfuls over batter. Carefully spoon and spread remaining batter over filling.
  4. Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Sprinkle evenly with baking chips. Cool completely, about 1 hour 30 minutes. For brownies, cut into 8 rows by 6 rows. Store in refrigerator.
