brown rice

 Hello!!!!! everyone, I am new to the neighbourhood, and I have a dilemma, I am looking for brown rice recipes.  Also, If there is a cookbook out there, please let me know.  Thank you very much

I have used an Alton Brown brown rice recipe in the past and it is really good.  You can access it through the Food Network website.  Sometimes I add chopped onions to it to give it a totally different flavor.

Hi Rameses,  You can use brown rice in any other rice recipe.  The difference is that brown rice requires double liquid and about 45-50 minutes to cook with a tight fitting lid.  Can't give you other websites to get recipes but there are many if you do a search.  I have used brown rice and other whole grains for many years. Good luck cookin!!

rameses, i do the same thing, just subitute the brown for the white. I sometimes use "wild rice",(what I have is precooked and looks black), in a lot of recipes. I don;'t see any difference in the taste, just amounts of water, cooking time and looksSmile

Hi rameses,

Here are three recipes for brown rice.  Enjoy! AtlantaPat Cool

Brown Rice Pilaf (Use Vidalia onions or other sweet onions in season to make this tasty pilaf.)

Ingredients:

2 tablespoons butter

1 large sweet onion, chopped

1 cup brown rice

2-1/2 cups seasoned chicken broth

1 teaspoon salt

1/4 teaspoon pepper

Dash of cinnamon.

Preparation

Melt butter in a large skillet over medium heat.  Sauté onion in butter until tender, and begins to turn golden in color.

Add rice and sauté, stirring until onions begin to brown. 

Add chicken broth and bring to a boil. Stir in salt, pepper and cinnamon.

Transfer to a covered baking dish or leave in skillet (if it is ovenproof).  Cover and bake at 350 degrees for 1 hour, or until rice is tender.

 

 

 

Brown Rice Casserole

Cooked brown rice is baked with green onions, Parmesan cheese, and other ingredients. 

Ingredients:

 

2-1/2 cups cooked brown rice

 

4 green onions, chopped

 

1 cup low-fat creamy cottage cheese

 

1 teaspoon Dill weed

 

1/4 cup freshly grated parmesan cheese

 

1/2 cup milk, skim or low fat

 

1/2 teaspoon Dijon mustard

 

Nonstick cooking spray

 

 

 Preparation

Combine cooked rice, chopped green onions, cottage cheese, Dill weed, Parmesan cheese, milk, and mustard in a mixing bowl. Stir gently until well blended.

Pour into a casserole dish sprayed with nonstick cooking spray.

Bake in a 350° oven for 15 to 20 minutes. Serves 4-6.

 

Vegetable Fried Rice:  This fried rice is made vegan (no egg), so it is healthier -with zero cholesterol.  If you don't want it vegan, just use regular chicken seasoning.  

Watch vegetables carefully, as you don't want them to overcook.  Also as a change, try adding other vegetables such as, red bell pepper, zucchini, turnips or eggplant.  If you like a little spice, add 1/4 teaspoon cayenne pepper.

Cooking time does not include cooking the brown rice.  I usually cook extra rice when I made a batch and keep extra in the refrigerator, so that I will have it on hand when I want to make a recipe calling for cooked brown rice.

 4 cups brown rice, cooked,   2 tablespoons Sesame oil,   1 medium onion, diced,   1 cup carrots, diced,   1 cup frozen peas,   1/2 cup corn,   1/2 cup broccoli florets,   1/2 cup snow peas,   1/2 cup cashews,   1/2 teaspoon seasoning salt,   1 teaspoon vegan chicken seasoning,  Soy sauce, to taste. 

Directions

 

Heat oil in a wok or skillet, and  sauté onion until clear and tender.  Add cashews, carrots, broccoli, peas and corn.  When carrots are almost tender, add snow peas, cooked rice and seasonings.  Pour in hot platter and serve hot.
