help! soupy potato salad

Potato salad is a favorite at our house.   We make it with potatoes, of course, hard-boiled eggs,  some Miracle-Whip( just enought to coat), seasonings, onions, etc.   It tastes great,  but when it sits in the refrigerator 1 or 2 nights,  it gets incredibly soupy.   So much so that we have to drain it,  and then it tastes dry.   Does anybody have any idea why this is happening?  The only semi-liquid we put in is the Miracle Whip, and it is quite viscous.    Does this separate after a time?  Thanks for any suggestions.

Hi pebav. I use french onion dip and a little helmans mayo for cold salads. Next time you make the potato salad add the french onion dip and some helmans mayo...

The only reason I can see that this would happen is if you are cooking the potatoes too long and they are kind of mushy.  Or, when you drain them you don't let they dry out completely and cool comepletely before cutting up and mixing in dressing.  When the potatoes are still a little firm, remember they will continue to cook after you take them off, drain them and put the pan back on the burner that has been turned off and make sure all the water evaporates, then chill them and then when they are cool you can cut them up and add the dressing.  Usually I have to add more mayonaise the second day as the potatoes have absorbed the first mayo I put in the salad.

 Coleslaw will also do this as the cabbage releases liquid as it sits so very little dressing it will almost seem dry when you make it needs to be added, otherwise it will be very soupy the next day.

Hi pebav, My mother dosen't peel her potatos before cooning them,, she sid that they stay firm longer that way. They also don't absorb as much watetr. After boiling untill done, she puts them into cold water ,then drains them and when cool, pells, they come right off, and cuts them up.

Hi---potato salad is also a favorite in my family. Like some of the replys said---let the potatoes cool completely before makeing the salad. I have also found that the consistency stays the way we like it when I use real Mayo. instead of the Miracle Whip. Good luck.

 Any Kraft products have way too much water in them. If you use these products in

your salad, I don't see anyway of getting around water the next day after refrigeration.

Sorry.  An old lady I worked with pointed this out to me.  She said you will also notice

it in butters, like Country Crock, that's why she doesn't like using it on her toast.

 Someone should try making potato salad with helmans mayo and french onion dip. You'll never know how good it is........" until you have given it a try"..Let me know how it turned out.

 Great ! The french onion dip and helmans trick works with macorni salads and I have used the french onion dip in baked dishes as well like.... scalloped potatoes...

 Granna2 and to all who may be interested..   

Mix helmans mayo and french onion dip in a bowl and taste test it.

Remember french onion dip is nothing more than sour cream and green onions.Thats something your going to experiment with. Give it a try. Let me know.
