cheesecake tips

I would like a recipe, or ideas, on making cheesecake in a 9x13 pan.  I love cheesecake and promised to take one to work.  Problem - I need to serve about 25 people but don't want to make 2 springform cheesecakes.  I would love to use two 9x13 pans instead.  Anybody have sugestions?

A 9-inch wide by 2-inch high cheesecake has a volume of 127 cubic inches.

A 9-inch wide by 13-inches long by 2 inch deep baking dish has a volume of 234 cubic inches.

So I would double a recipe for a 9-inch wide by 2-inch high, round cheesecake, to fill a 9 x 13 pan.

It should bake just fine, however, it suspect it might not be easy to get out of the pan. Will you bake it in pan nice enough to set on the table? Will you put parchment paper in the pan and let it extend over the sides so you can lift it out, and if you do that will the exposed parchment paper get brittle from extended heat making it difficult to lift out.  I have never tried baking a cheese cake in a sheet cake pan. Lots of luck and let us know how you did it and what kind of presentation it made.
