The recipe I have is as follows

1 lg. box lime jello (made according to directions)

1 3oz pkg cream cheese

1 small can crushed pineapple (drained or may replace some of the water for the jello with the juice from the pineapple)

1/2 c chopped pecans

It may be made with nuts of preference but walnuts are my least favorite.  I would think you could also substitute cottage cheese for cream cheese but there would have to be a reduction in liquid for jello.  This is a family favorite around the holidays.

I remember making this lime salad mold with I believe cottage cheese, pineapple, celery and nuts (walnuts?).  It was so delicious and have lost the recipe of which found in a cookbook given to me by my sister which was made by a hospital she worked at.  Can no longer find the cookbook.  The name of the salad in that cookbook was "Alice's Salad".  So refreshing especially in the summertime for a barbecue with a tri-tip.

Had a member that talked about it here: http://www.bettycrocker.com/CommunityForums/forums.aspx/10/2123/6436#6436

Hi butterflylady17, courtesy of the Exeter Volunteer Hose Co. Ladies Auxiliary...somewhere in the 60's when jello molds ruled...

                                   Lime Jello Salad

1 large pkg lime jello                                      1 large container of cottage cheese

1 large can crushed pineapple                          1 C walnut pieces

In a large bowl dissolve jello in 1 1/2 C hot water. Add 2 C cold water and 1/2 C pineapple juice. Stir in crushed pineapple, cottage cheese and walnut pieces. Pour into jello mold and chill till firm.

Now from 1961 BC's New Picture Cookbook...

                                     Pacific Lime Mold

Dissolve 1 pkg..3 oz.. lime gelatin in 1 C boiling water. Add juice from 1 can..9 oz.. crushed pineapple; chill till slightly thickened. Beat till frothy. Fold in crushed pineapple, 1 C creamy cottage cheese, 1 t horse-radish, 1/2 C mayonnaise or 1/2 C whipping cream, whipped and 1/4 C chopped nuts. Chill until firm. 6 servings.

And don't forget to check out CateC's thread that she so kindly posted. There are more Jello Mold Recipes there. And if none of them are what you are looking for, post again, and Back to the Cookbooks!
