tea cakes

I am looking for "the" Southern tea cakes (cookies) recipe my grandmother use to make. HELP??

Could you please describe them in a little more detail?  Do you rember her using a particular recipe book?

She never used a cookbook. Everything was mixed by hand.  My grandmother passed away in 1991 at the age of 83.     The ingrediants I remember are butter, flour, sugar and buttermilk.

You might want to try the web site at the food network.  Paula Deen is a "Southern Gal" she may have something like you remember.

Maybe one of these is similar.


Lemon Tea Cake Cookies

2 sticks butter, softened
1 1/4 cups sugar
1 tsp lemon extract
2 eggs
1 tsp lemon zest
3 cups flour
1 tsp baking soda
1/4tTsp salt
3 tbsp buttermilk

Beat butter for 1 minute. Add sugar and lemon extract, beating until light and fluffy. Add eggs and zest, beating until well mixed. Combine flour, baking soda and salt. Add 1 cup of flour mixure and 1 tbsp buttermilk at time, beating well after each addition. Drop by rounded tbsp on a greased baking pan. Sprinkle with sugar and bake at 350 degrees for 10-12 minutes. Makes about 45 cookies.

 

 

Grandma's Teacakes

3 cups flour
1 1/2 tsp baking soda
1 tsp baking powder (or 3 tsp cream of tartar)
1/2 cup shortening
1 1/4 cup sugar
2 eggs
1 tsp vanilla
1/4 cup buttermilk

Whisk flour, soda and baking powder together. Add remaining ingredients and stir until well combined. Roll out on a floured surface, cut into squares or circles. Bake on greased cookie sheet at 400 degrees 8-10 minutes until lightly browned.

 

Mama's Tea Cakes

5 cups flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
2 sticks butter, room temp
2 cups sugar
3 eggs
1 tsp vanilla
1 tbsp lemon juice
1/3 cup buttermilk

Mix dry ingredients and set aside.
Cream butter, then add sugar and mix well. Add eggs one at a time, then vanilla and lemon juice. Add dry ingredients slowly, alternating with buttermilk. Add more flour if needed to be stiff enough to roll.
Roll out 1/2" thick and cut out. Place on greased baking sheet. Bake at 400 degrees for 8 to 10 minutes, until golden. Cool on a rack.

My mom makes this mini cakes: It is called "Food for the Gods" I have to ask her why is it called that. she uses colored plastic wrappers after they are cooked.


Food for the Gods


1 1/4 cups of flour


1/2 tsp. baking powder


1/2 tsp. baking soda


1/4 tsp salt


1 cup dates, pitted and chopped


1 cup butter


1 cup white sugar


1 cup brown sugar


3 eggs


1 cup walnuts, chopped


 Preheat  oven to 350. Grease and line 9x13 inch pan with wax paper. Combine the first 4 ingredients. Take 1/2 of the flour mixture and dredge the dates. Cream butter and sugar until light and fluffy. Add eggs, one at a time, and beat well after every addition.Gradually stir in remaining of the flour mixture.


Add dates and walnuts and stir completely combined. Pour batter into the prepared pan and bake for 10 minutes. Lower to 300 degrees and bake another for 30-40 minutes or til done. Cool on wire rack for 20 mins and cut into bars. Wrap individually with colored cellophane wrap.
