I am looking for a recipe for stuffed pork chops using a good home style bread stuffing with apples and dried cherries.  Can this be accomplished in a crock pot?  Thanks for all you recipes and I look forward to trying them this week.

I love stuffed pork chops. I usually make 4. I peel, core and dice an apple and saute it with chopped onions and celery (about 1/4 cup of each) in a little butter. I stir in 2 tbsp of orange juice or apple juice. If you don't have juice, you can use broth or wine. I lightly toast a piece of bread and tear it into small pieces. I add the bread, 1/4 cup craisins, salt and pepper to the skillet and stir until all the liquid is absorbed by the bread.

You can use any fruits/veggies you like; dried cherries, figs, raisins, carrots, onion, celery, garlic, etc.

I cut a pocket into each chop and stuff each one with the mixture. I secure with toothpicks. I season both sides of each chop with salt, pepper and garlic powder then brown each side in a skillet with a little oil and butter, then bake in the oven for 45 minutes to an hour at 350. I make a small cut next to the bone to make sure the meat is done.

I don't see why you couldn't cook these in a crock pot. The meat will probably shrink away from the bone some, but they will cook done in a crock pot. They may look more appealing if they are browned in a skillet first. I think I would add about 1/3 cup of broth or juice to the crock pot and cook on low for 4-5 hours.  You can stuff them the night before, refrigerate them then cook them the next day.

WOW! A.C., That looks so good. I never thought of apples and cranberries, or cherries. I use that stove top stuffing stuff, hahahaha. When I fix it in the crock-pot, I layer it, chops,stuffing,chops ,adding a small amount of water, just to cover the bottom,and cook it  2-3 hrs. on high. granna2
