Share Favorite Autumn Recipes!

It’s that time of year again! The cooler weather makes me want hot chai tea and ginger cookies! It looks like I’m not the only one that's craving fall time spices.  Here are some recent blog recipe posts that caught my eye. Hope you enjoy!

9 Replies to Share Favorite Autumn Recipes!

Really love my mother's recipe for apple crisp.  It's just one of those recipes that says "Fall" to me.  Take 5 cups peeled, sliced apples (Jonathan works well) and toss with 1 1/2 c. sugar that has been mixed with 1/4 c. flour.  Place in greased 9 x 13 pan.  Mix 1/2 c. brown sugar, 1/2 c. butter, 1/2 c. oatmeal, l/2 c. flour, and 1 tsp. cinnamon.  Sprinkle over apples and bake at 325 for 40-45 minutes.  You may substitute peaches in place of the apples if you so desire.

Oh I am sooo looking forward to October when it will finally be cool here in Southern California.  The apple harvest is on so I've searched out my friend, Serena's, Apple Brownie recipe.  It really is to Fall to me.


Serena's Apple Brownies


 l      3 cups flour


l      2 cups sugar 


l      1 tsp cinnamon (also good with apple pie spice or pumpkin pie spice)


l      1 tsp salt


l      1 tsp baking soda


l      1 cup chocolate chips (semi-sweet or double chocolate or half butterscotch chips)


l      1 cup chopped and toasted walnuts (optional) (Pecans are good too)


l      3 cups peeled, chopped applies (3-4 Macintosh apples) I grate the apples using a large hole grater


l      2 eggs (slightly beaten)


l      1 cup oil


 


Preheat oven to 325 degrees


Grease and flour 13” x 9” x 2” baking pan (or 2 9”x9” square pans)


Combine flour, sugar, cinnamon, salt and baking soda in large bowl.


In separate smaller bowl blend eggs and oil


Add egg mixture to flour mixture and mix well.


Stir in chocolate chips, walnuts and applies


Batter will be stiff


Spread batter into pan and even out with rubber spatula


Bake for 50 to 60 minutes (do not overcook)


 


Wendy’s NOTE:  This comes out like a very moist apple cake type brownie.  I like it best without chocolate chips but others seem to like it with.

I love Autumn, there is so much to do and the weather is usuall nice. Theres a winter hot drink that is made. I think it's called "wassile"? I had always wanted to try it and I came across this recipe and decided to try it. I really love it and I've taken it to church and several liked it. It's served hot or cold and it was very good, I have also made and drank it when I had a sore throat. Autumn Tea: 5 individual tea bags, 5 c. boiling water, 5 c. unsweetened apple juice (natural is best),2 c. cranberry juice,1/2 c. sugar, 1/3 c. lemon juice, 1/4 tea. pumpkin pie spice: Place tea bags in a heat proof boul and pour on boiling water, cover and steep for 8 minutes. discard tea bags. Add the remaining ingredients to tea, stir untill sugar is dissolved. Serve warm or cold over ice.  This recipe came from taste of Home 2003 annual cook book. I love pumpkin and apple pie. I use Libby's pumpkin and the recipe. I also love to bake apple pies. granna2

Here is my mom's recipe that I love making every year!

Pumpkin Chocolate Chip Muffins
Ingredients
3 cups of flour (Used wheat flour... but next time would mix 1/2 all purpose and 1/2 whole wheat)
1¾ cups of sugar
2 tablespoons of pumpkin pie spice
2 teaspoons of baking soda
½ teaspoon of baking powder
4 eggs
1 can of pumpkin 15 oz. (Or around 2 cups worth)
1 cup of melted margarine  (I just had butter in the house- so I used it…)
1-2 cups of dark chocolate chips

Directions:

Mix flour, sugar, pumpkin pie spice, baking soda and baking powder together in a large bowl. In a separate bowl, blend eggs. Add pumpkin and chocolate chips. Pour in dry ingredients and stir until just moist.
Bakes about 24 muffins.
Bake for 350 degrees for 20-25 minutes or until puffed and sprint to touch.

Enjoy… serve with hot chocolate or tea. Smile

 Apple Oatmeal Caramelitas


Crust ingredients:


2 cups Flour


2 cups quick cooking oats


1 ½ cups brown sugar


1 tsp. baking soda


½ tsp salt


1 ¼ cup softened butter


Filling:


12 oz jar of caramel ice cream topping


3 tbsp. flour


3 apples thinly sliced


1 cup cinnamon baking chips


½ cup pecans


Ina large bowl, blend all crust ingredients at low speed until crumbly.  Press about 3 cups of mixture into bottom of pan and bake at 350 for 10 minutes.  Reserve the remaining crumb mixture for topping. Meanwhile in a small bowl combine caramel and flour.  Set aside.


Sprinkle warm crust with apples and caramel mixture, sprinkle evenly cinnamon chips then add remaining crumb mixture, bake for 18 -22 minutes or golden brown.  Cool completely. 


If you like to have extra chocolate you can add some chocolate chips  or I sometimes like to use heath crunch chips.

these are so good i didn't want to share them! 


i also tried a batch replacing the apple with 1/2 cup of shredded coconut and used chocolate chunks instead of cinnamon.  also extremely yummy!
