Cannot Remember Recipe

When I was in my early 20's, my wife (desceased) used to make these muffins (rolls, biscuits) that were out of this world.  They were made in a cupcake pan without liners and when they were finished, they were hollow in the center (a crust around air).


I do not remember what they were called or how they were made.  Can someone help.  Thank you.

Were they sweet or were they savory?  Savory hollow rolls are pop-overs.  There is a crescent roll recipe on Betty's sister site Pillsbury.com for magic puffs.  They are sweet and use a marshmallow in the middle of each roll.  I hope this helps.

BLT is probably correct that they are popovers.  My mother made these and filled them with custard (like a éclair) or we used a savory creme sauce with fish or meat in it.

I'll bet you are looking for popovers!  They are very easy to make.  They are very similar to Yorkshire Pudding - which isn't pudding at all!  Leave it to those lovely Brits to call a roll pudding, lol!


Stores sell popover pans which are deep, but you can use ramekins or a muffin/cupcake pan - they just won't rise as high.


Preheat the oven to 450 degrees.  Grease the pan with butter or shortening.  Beat 2 eggs in a mixing bowl.  Add 1/2 tsp salt and 1 cup milk to the eggs.  Beat it until well mixed.  Then add 1 cup of plain flour.  Beat it until the mixture is well combined and smooth.  Pour the mixture into the greased cups/pan - but only fill them half full.


Bake at 450 degrees for 15 minutes, then reduce oven temp to 350 degrees - and bake 15 to 20 more minutes until golden brown.


They are good whether you eat them with roast and gravy or with butter and jelly or honey!

One thing you need to know if you make your popovers: Do not open the oven door until they are done!  They probably will fall and not puff like they are supposed to.
