Dessert sauces as gifts

I am hoping to make a dessert sauce (e.g. something like the silky chocolate caramel sauce) and distribute as gifts to my staff over the holidays.  Most of the recipes I have looked at require refrigeration.  If this is the case, how long will most of these sauces keep for after I make them?  Are there any you are aware of that do not require refrigeration and might have a longer shelf life?  Thanks.

Hi @TamsterC! For the flavor of sauce you are looking for (chocolate and/or caramel), there will be ingredients in either recipe that require refrigeration. You can, however, have the sauce out of the refrigerator for no longer than 2 hours (for food safety reasons), i.e. while you are transporting the gifts.  (Have the gift recipients keep them in the refrigerator until they go home.) The sauces can be kept for use as long as the cream or half-and-half is good — so look at the "use by" date on the carton.  One little trick to help the sauces last longer in the refrigerator is to look for ultra-pasteurized cream or half-and-half (whichever her recipe calls for), the pasteurization process allows the cream to be safe for a longer period of time. We also recommend that you add labels to the sauce jars with a "use by" date according to what the ultra-pasteurized cream container says.
