I have never added veggies while baking the cranberry recipe, but that's not to say it can't be done! I would think you would have to careful not to use one that the cranberry color would turn "icky" since you have kids--maybe baby carrots? Come to think of it, maybe green beans, etc. would appeal to kids more if they were turned red! Magic beans anyone?
I do have a chicken recipe to which I have added veggies while the chicken cooks. I have tried broccoli florets and mixed vegetables in the one below:
Forgotten Chicken
Put into a 9" x 13" pan:
1 1/2 cups raw rice (I have used white, brown, and wild rice)
1 package Lipton dry onion soup mix (I swear I don't work for these people, although I think I'm going to ask for a cut!)
Mix together:
2 cans cream soup (chicken, mushroom, celery, even cheese)
2 cans of milk
Pour soup and milk mixture ofver rice.
Cut up a 3-3 1/2 pound chicken. Pleace chicken pieces on top of rice. Cover with foil. Bake at 300 degrees for 2 hours or until chicken is completely cooked. (Add more liquid if rice seems dry.)
This is a great dish to put into the oven before going to church or out to run an errand.
