eggs in a recipe

Hi! What is the best waytohalve arecipethat calls for one egg?I have been beating the egg, and only using half ofthat, but read on a different site that was the wrong way. Thier way was to separate the egg, use half the yolk and halfthe white.Thar seems rediculous to me, but whatever! Which way is correct? ( recipes for baked goods). Thank you!

I would use 1 whole small egg.  I always thought that if you halved a recipe and the number of eggs didn't come out even you rounded up.

I personally don't think the way you are doing it is a problem.  Most recipes that call for an egg mean a large egg and a large egg is 1/4 cup.  To me, that would make sense to measure 1/8 cup of beaten egg to equal half an egg.  I believe that is the way egg substitutes are measured and they are all mixed up.  I'm all for doing things the easiest way!

The only time you would need to divide the white and yolk is if you need to beat the white to soft or firm peaks.  Otherwise you can  beat the whole egg and measure out 2 tablespoons of egg.  You could also use 2 tablespoons egg substitute.  Have a great day!
