chicken salad recipes needed for 100 people.

HELP PLEASE!!! I need a quck and easy chicken salad receipe for 100 people that does not include PASTA.

Have you looked in recipezaar?  You can adjust the servings and they calculate it for you - and you can read reviews.  I don't hve a recipe, but I had a fantastic chicken salad with chunks of apples in it at a luncheon and everybody was raving about it afterward... good luck Big Smile!!!

Bobby Flay was on there fixing different ways of doing chicken and sandwiches. If you already know how to make chicken salad, then you can add grapes (white) to the salad. Season it well with what seasoning you like.


A few of my co-workers like the grapes, onion powder, garlic powder, a little salt, bell pepper, celery. Oh and make sure that you use HELLMAN"S mayonnaise on any of these recipes. That's what bring out the flavor in the dishes. I beleive the recipe is on the back of the jar.


Another friend of mine like this in his salads: onions, garlic, bell pepper, no eggs, but if you want to add eggs, you can, celery, pepper, a little salt. If you making sandwiches then you would have tomatoes, lettuce. If not you can make it just as a dip. Either way it's good.

Suzanne-1 prepared rotissorie chichen from Wal-Mart deboned


              5 boiled eggs


              1/2 cup chopped pecans


             4 Tble spicy brown mustard


             1/2-3/4 cup mayonaise


             1 Tble garlic powder


             2 tsp. cererly seed


             1/2 cup sweet pickle relish


             1/2 chopped onion


Debone chicken and chop into small pieces, chop eggs and add all ingredents and refrigerate before serving


Serves  about 15 flull size sandwiches

Hi Yabbasuz:

Here is a helpful link of cooking for a crowd... I'll ask the kitchens to update for 100... but for now I would just say double the 48 servings.
