why does certain meats steam instead of fry

why is it sometimes, when i fry meat or fry raw shrimp, it gets watery in pan and i think its steaming more than frying. i tried using different oils and different temps.. but it still happens... i tried to fry shrimp, just pan fried with vegetable oil and butter on med/high heat.. i bet i had at least a cup or more of water in pan.. what am i doing wrong..

If you put too much meat into a heated skillet the meat will steam instead of brown. Try putting smaller quantities of meat or shrimp into the hot oil this should stop the steaming. You may have to cook in small batches or use multiple skillets, if you want to cook the meat quickly.
