I found two sites for you that have ideas for using a cake mix as a base for bars, cookies and muffins.  I'm sure there are others, too but these are what I was able to find easily.

I recently came across a recipe for cookies (though they are more like muffin tops) :

Pumpkin Chocolate Chip Cookies

1 spice cake mix
1 can (29 oz) pumpkin
1/2 bag  semi-sweet chocolate chips

Mix all ingredients. Bake at 350 for 20-25 minutes.

I was a little apprehensive about mixing these flavors, but they turned out so well and were a huge hit with hubby's coworkers!

Here's a really easy recipe for cookies using your mix:

Cream together:  1 egg, 1/3 cup butter, and 1/3 cup shortening.  Add cake mix and beat until well mixed. You can add nuts and/or raisins if you want, then just put on a cookie sheet as drop cookies.  Bake at 350 for 10 minutes, and let them cool on the sheet for about 2 minutes before miving to racks.

Your spice mix would be really good as "gingerbread men", so if you want to adapt this for rolled cookies, add about 2 tbsp flour and chill dough before rolling out.
