center of cheesecake not firm

I love New York Style cheesecake so decided to bake my own.  Got the Springform pan.  The cracking issue is not so bad.  My problem is that I can't get the center to firm up.  If I cook it much longer, it cracks.

How do you know when a cheesecake is done? Touch the top lightly, or gently shake the pan. The center may be just firm to the touch or jiggle slightly, but it will set during chilling. For best results, don’t poke the tip of a knife into the cheesecake to test for doneness because the hole can cause cracking.
