Alter baking times

I have entered a just for fun local cooking competition that includes preparing an entree, a side and a dessert using sweet potatoes and everything must be accomplished in one hour.  There is no problem on the entree and side; however, the cooking time on the dessert exceeds the one hour mark.  The dessert will be served hot so cooling time is not the issue, but the suggested cooking time on the recipe stated 30 minutes.  During a "test" I had to add an additional 10 minutes to get the desired doneness.  Any suggestions on perhaps increasing the oven temperature, using a metal pan instead of a glass 9 x 13 pan, anything suggestions are appreciated.  During the competition I will have access to a convection oven.  The original recipe says to bake at 350 for 30 minutes.  How would I convert to convection time.  Thanks and I love this website!

This is a sweet potato "blondie".  It has a cup of brown sugar, a cup of white sugar, 2 cups of peeled and grated sweet potato, 4 eggs, 1.5 cups flour and a little salt, baking powder and vanilla.

Cheri could they be baked in a shallower pan 


I bake my brownies in a baking sheet pan 9x12x1


It holds a boxed BC Brownie Mix nicely and cooks in 20 min.


I do use 3 eggs so it makes them more ~ cake ~ like
