Substitution for Evaporated Milk?

Hello all...I'm new to the community.  My cousin (who lives near Antarctica) is wondering if there is a substitution for evaporated milk.  Her town offers whole milk , heavy cream and sweetened condensed milk only.  Any ideas that I may pass on to her?  She intends to use it to bake desserts.  Thanks in advance!

 Welcome to the Message Boards!

If she can get dry milk powder she can make a substitute for the cans:

Ingredients:
2/3 cup non-fat dry milk
3/4 cup water
Instructions:
Mix the water and dry milk powder together. Then, use in place of the evaporated milk in any recipe.
Yield: 1 cup (8 ounces)

Hi nocakeforme, You can also use whole milk. it depends on what she's fixing. When using powdered milk to make it, you can mix the dry milk with the other dry ingredents and just measure the water as the milk liquid. Since undulated can milk has more fat then whole milk you might want to add some cream or melted margarine. I'd say about 1 T. per cup. With the price of can milk, she might save money, :-(.  Granna2
