Looking for a Slow Cooker White Chicken Chili recipe

I am looking for a slow cooker white chichen chili recipe that appeared in one of the small Betty Crocker cookbooks that you get for about four dollars at the check-out at Wal-Mart. The recipe called for chicken, taco seasoning, cream of chicken, great northern beans, green chilies. I do not remember if this was all the ingredients that were required and I packed my cookbook and our shipment does not come in for another month. I would appreciate any help anyone can offer.

Hi.  Hope this helps.  It was an adaptation of Betty Crocker recipe.  Found it on . 

1 1/4 lbs boneless skinless chicken
2 (15 ounce) cans great northern beans or navy beans
1 (15 ounce) can hominy or white corn
1 (1 1/4 ounce) envelope taco seasoning
1 (4 1/2 ounce) can of chopped green chilies
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (14 ounce) can chicken broth
1/2 cup sour cream
chopped green onions (optional)
monterey jack cheese (optional)

Place chicken in a 4 quart slow cooker.
  1. Top with beans and corn.
  2. In a medium bowl, combine taco seasoning, chiles, condensed soup, and chicken broth. Pour over top of ingredients in the crock pot.
  3. Cover and cook on low for 8 to 10 hours.
  4. Before serving, stir gently to break up chicken, then stir in the sour cream.
  5. Serve topped with green onions and jack cheese, if desired.

Slow Cooker White Chicken Chili
Prep Time:15 min
Start to Finish:4 hr 35 min
Makes:8 servings


6skinless chicken thighs (1 1/2 lb)
1large onion, chopped (1 cup)
2cloves garlic, finely chopped
1can (14 oz) chicken broth
1teaspoon ground cumin
1teaspoon dried oregano leaves
1/2teaspoon salt
1/4teaspoon red pepper sauce
2cans ( oz each) Green Giant® great northern beans, drained, rinsed
1can (11 oz) Green Giant® Niblets® white shoepeg corn, drained
3tablespoons lime juice
2tablespoons chopped fresh cilantro
1.

 

Remove excess fat from chicken. In 3 1/2- to 4-quart slow cooker, mix onion, garlic, broth, cumin, oregano, salt and pepper sauce. Add chicken.

2.Cover; cook on Low heat setting 4 to 5 hours.
3.Remove chicken from slow cooker. Use 2 forks to remove bones and shred chicken into pieces. Discard bones; return chicken to slow cooker. Stir in beans, corn, lime juice and cilantro. Cover; cook on Low heat setting 15 to 20 minutes or until beans and corn are hot.

Thank you very much. I got my shipment in. The recipe you sent was very helpful. This is the orginal Betty Crocker recipe out of Slow Cooker Meals around October 2003. This is my husband's favorite recipe. I have never put hominy in it. I just add another can of beans.

1 1/2 pounds boneles skinless chicken thighs

2 cans ( ounces each) great northern beans, rinsed and drained

1 can ( ounces) white hominy, drained

1 envelope ( ounces) Old El Paso 40% less-sodium taco seasoning mix

1 can ( ounces) Old El Paso chopped green chiles

1 can (10 3/4 ounces) condensed reduced sodium cream of mushroom soup

Sour cream, if desired

Chopped green onions, if desired

1. Place chicken in slow cooker. Top with remaining ingredients except sour cream and onions.

2. Cover and cook on low heat setting 8 to 10 hours.

3. Before serving, stir gently to break up chicken pieces. Serve topped with sour cream and onions.

I hope you can help me!  I borrowed this cookbook/magazine from a friend recently and then lost it. I feel terrible;  she doesn't cook much and this was her favorite group of recipes.  Do you have any idea where I could find this?

2 whole chicken breasts, skinned, deboned, cut in 1/2" chunks Celery heart 1 med. onion 2 cans stewed tomatoes, sliced 16 oz. med. salsa or picante sauce 1 can chick peas (or 1 pkg. pkg. white kidney beans) 6 oz. mushrooms Olive oil Brown chicken in 1 tablespoon olive oil. Chop celery, onion and mushrooms. Combine all ingredients in large crockpot, stir and simmer on low heat for 6-8 hours. Serve with bread or taco chips. *If you like it spicy, use hot salsa or picante sauce. Hope this recipe helps...It tastes great and the truth, how easier can it get? Hope you enjoy!
