1960s Dinner for Two cookbook Chicken Curry recipe

I am traveling and left my 1964 era copy of Dinner for Two at home.  I'm having a dinner party and would love to make the Chicken Curry recipe from that book.  Does anyone have it?  The recipe called for making the chicken curry (cube chicken and make the curry sauce), then spoon it over rice and serve condiments -- peanuts, eggs, chutney, peas, bacon, (not sure if I remember all the condiments correctly) around the outside of the rice and chicken curry.

Chicken Curry
Betty Crocker 1961 cookbook


3 T butter
1/4 c minced onion
1 1/2 t curry powder
3 T flour
3/4 t salt
3/4 t sugar
1/8 t ground ginger
1 c chicken broth
1 c milk
2 c cooked diced chicken
1/2 t lemon juice
3 to 4 cups cooked rice (1 cup uncooked)


Melt butter over low heat in heavy saucepan. Saute onion and curry in melted butter. Blend in flour and seasonings. Cook over low heat until mixture is smooth and bubbly. Remove from heat. Stir in chicken broth and milk. Bring to a boil, stirring constantly. Boil 1 minute. Add chicken and lemon juice. Heat. 4 servings.


Curry Accompaniments


Chutney, tomato wedges, raisins, slivered salted almonds, chopped salted peanuts, sauteed onion rings, pineapple chunks, sieved hard-cooked egges, crisp bacon bits, sweet or sour pickles, currant jelly, flaked coconut, India relish, sliced avocado

Shrimp Curry


Make chicken curry above except use 2 cups cooked, cleaned shrimp in place of chicken.
