Okay, just be sure and let me know what you think of them....... I've had a number of raves, and only one saying 'too sweet', but if I remember correctly, the BC mix was kinda sweet, too. Here it is: (couldn't get to single space, hope it comes out okay)
MY DATE BAR RECIPE – JANET JOHANSEN – 4/19/11
FILLING:
1-1/2 cups water
3 cups chopped pitted dates
¼ cup sugar (3 Tbsp if using the dates that are coated w/sugar)
¼ cup grated (or fine) coconut (optional)
½ tsp lemon or vanilla extract
Cook the first 4 ingredients at low simmer for about 10 minutes, stirring well. Be careful not to burn! Let cool to room temperature. Puree in a mini processor or similar, if desired (I did). Add extract.
CRUST:
1 cup all-purpose flour
3/4 cup whole wheat or pastry flour (I used pastry flour)
1-1/2 cups oatmeal, not instant
1 cup brown sugar, packed
½ tsp salt
½ tsp baking soda
3/4 cup butter or butter blend
Preheat oven to 350°. Lightly grease a 9 x 13 metal baking pan.
Combine flours, oatmeal, baking soda and salt in large bowl, stirring to blend. Cut in butter and shortening with pastry blender or 2 knives until clumps form. Refrigerate until filling is cool.
Put half crust mixture in bottom of prepared pan, pat down. Spread date filling over this, and then sprinkle remaining crust on top. Pat down. Bake 25 – 30 minutes or until light golden brown. Mark squares while still warm, then let cool. Makes about 36.
