Butter Brickle Cake

 

In the early 1990's my family's favorite cake disappeared off the shelves.  Every since I have been trying to recreate it.  All to no avail.  I can come close to the actual cake but the frosting recipes are a far cry from the original.  My search to recreate the recipe has shown me that I am definately not alone.  If the recipe was taken off the shelves because it was not selling enough, why not offer it online?  I know I represent thousands of very dissappointed customers in asking that you bring our butter brickle back!

Leonidus:  Were you able to obtain the REAL recipe?  B/B was our family fav as well, and we have been looking for this recipe since they discontinued it.  Would appreciate any info.  Did you ask the folks at Betty C for assistance?  HEY~ANYONE ELSE OUT THERE KNOW OF THIS RECIPE?

BUTTER BRICKLE LOVER: let's take a trip down memory lane....


BB was also one of my all-time favorites in the 70's and it always will be. My friend and I were about 10/11 and we would bake butter brickle cake and watch jerry lewis movies on the wknds. I was also disappointed to hear that it was discontinued. As a baker myself, I do my best to imitate it. I have come up with a recipe very similar to the frosting and the cake itself... Butter Brickle Cake (Alvin II)
 
Prep: 15 Minutes
Bake: 38 Minutes
Cool: 1 Hour 10 Minutes
 
1 box Betty Crocker® SuperMoist® yellow cake mix
1 package (4-serving size) butterscotch instant pudding and pie filling mix
1 cup water
1/2 cup butter or margarine, melted
4 eggs
2 packages (8 oz each) toffee bits, about 2 cups
1 tablespoon all-purpose flour
1 1/2 cups whipping (heavy) cream
2 tablespoons packed brown sugar
 
 
1.     Heat oven to 350°F (325°F for dark or nonstick pans). Generously grease bottom and sides of two 9-inch round pans or spray with baking spray with flour.  (Do not use 8-inch rounds or batter will overflow.)
2.     Beat cake mix, pudding mix (dry), water, butter and eggs in large bowl with electric mixer on low speed 30 seconds; beat on medium speed 2 minutes. Toss 1/2 cup of the brickle chips with flour in small bowl; stir into cake batter (batter will be thick). Spoon evenly into pans.
3.     Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Run knife around side of pans to loosen cakes; remove from pans to wire rack. Cool completely, about 1 hour.
4.     Beat whipping cream and brown sugar in chilled large bowl with electric mixer on high speed until soft peaks form. Spread about 1/2 cup whipped cream mixture over 1 cake layer to within about 1/4 inch of edge; sprinkle with 1/2 cup of the brickle chips. Top with second layer. Frost side and top of cake with remaining whipped cream mixture. Press remaining 1 cup brickle chips into side of cake. Store covered in refrigerator.

High Altitude (3500 to 6500 feet): Decrease butter to 1/4 cup and add 2 tablespoons all-purpose flour to dry cake mix. Bake 33 to 38 minutes.

Betty's Tip When an article about Butter Brickle Cake ran in the Chicago Tribune in March 2001, it must have sparked some memories-the response to the article was tremendous!  If you loved Betty Crocker's butter brickle cake mix that was taken off the shelves in 1990, you can recreate the fabulous flavor with just a few easy embellishments to a box of yellow cake mix.

I can't believe I found !!!!  OMG'ISH!!!!    I found out about a year ago the my husbands favorate cake is Butter Brickle!!!   We  have been together for 30 years, of those thirty 15 years married.   I have never heard of the cake!!!  Now I can supprize him!   Thanks for researching and posting it.   I hope I can make it the way he remembers.   Wish me Luck

My search came up with http://www.hungrybrowser.com/phaedrus/m0430F04.htm#3.Use a yellow box cake and stir in 1/2 C. almond toffee baking bits.Frost with whipped cream frosting and toffee bits. Good luck.
