sneaky veggies

I have 2 young children and a husband that like mainly meat and potatoes.  I am trying to "sneak in" veggies into our meals in order to have a healthier family.  So far I have slipped cauliflower into mashed potatoes, zuchini and carrots in spagetti sauce, and shaved carrots and zuchini in brownies.  I have a lot of fresh eggplant and need recipes for that as well.  Any suggestions?  We also drink V8 Fusion...they love it so far.  Wink     Please help.  Anything you have tried that went over great or ones that were not so great would be appreciated.   Thanks so much!

How about tossed salads?  Try a chopped, layered salad like Seven Layer Salad.  You can customize it to suit your family's tastes.  There are recipes on this site and many others for Seven Layer Salads.   I'm fortunate that my family will eat most veggies.  Sorry to hear about the eggplant.  It's one of few veggies not welcome in my kitchen.  :-)    Congrats on sneaking veggies into their diet.  Try some cheese sauce on steamed broccoli or cauliflower.  Most kids like anything smothered in cheese sauce.  Big kids too. There are cookbooks available that sneak veggies into everyday foods that kids will eat.  Keep trying.  Ask your hubbie and kids what else they would like to try.  They may surprise you.  Something that is REALLY tasty is brussels sprouts with bacon and onion.  Dice 4-6 strips of bacon and cook in a large skillet until crisp.  Remove the bacon from the  pan and drain most of the bacon grease from the pan.  Saute a chopped onion (a Vidalia or other sweet onion works especially well) until transparent.  In the meantime, microwave a bag of frozen brussels sprouts until barely done, drain, and add to the onion.  Stir to coat and add the bacon, stirring gently.  So good.  Have a great evening!

ggod idea how do u do the one for mashed potatoes and sauce send me the recipe please i have a picky 5 year old that wont eat her veggies!Smile
