I completely understand your situation.  Just hang in there, I had some sort of health problems, I got a handle of it by eating properly and I found some very good supplements that provided the nutrients that my body was lacking.

I would like to hear from people who cook simple low fat easy dinners or dessert receipes. There are just 2 of us here and I am not cooking for a crowd. My husband and I need to watch our cholestrol and I am overweight and would love to eat and lose weight at the same time any help out there????

Do you like to make soup?

Buy a large can of V8 juice, pour into cup and store the rest, Heat it up in the microwave, great tomato soup!

add left over rice or pasta and mixed veggies and small cubes of beef, great tasting veg beef soup!

If you like spice, buy the spicey hot version of V8 and make your own torilla soup!

1 cup of t V8 is 100 calories. very little fat, lots of vitamins.

If you like spagetti, in the frozen food section precooked turkey meatballs. Marinara sauce has less suger. Thin your sauce with V8 to add more vitamins.

Go to trader Joes and buy Flax seed meal, very good source of omega 3, add to oatmeal, cereal , cookies. Whatever, has a nutty flavor.

I am on weight watchers and hubby is a diabetic and dialysis patient, so it  is challenging to find healthy alternatives.

Thank you so much for the V8 ideas!  WONDERFUL WONDERFUL WONDERFUL!

Ground turkey has saved me in so many ways.  Tacos, burgers, crock pot meals, chili, anything you'd add ground beef too, add turkey instead!  There is no grease to drain, and it taste's so much better!!!

Play with your salads!  Add new things all the time.  I know they get boring but yellow tomatoes and colored peppers can change the way it looks and make you want to try it :)

I saw a package of pre made salmon burgers in the freezer section the other day.  I didn't get them ( Im in Alaska where we get fresh salmon) but they looked pretty good!

Don't buy pre made sauces!  The preservatives will get you every time!  I love chunky tomatoes.  So I buy a can of the chopped tomatoes with garlic, basil, and oregano (look for low sodium or no preservatives) and simmer it on the stove top until it gets thick. Somtimes 2 tbsp of tomato paste helps it get thick. Or use fresh tomatoes!  The flavor is a little different, but it works, and you're controlling ALL ingredients!   I put this over whole wheat pasta with some ground turkey, or chicken breast strips.... YUM!  Add red pepper flakes if you want it spicy!!

Hi

I am new to cooking as i have just moved out of home.

I have been looking for healthy things to cook for me and my partner.

Last week i cooked chicken breast in a lemon/pepper sauce.

4 chicken breasts

2 lemons

2 tablespoons wholegrain mustard

2 tablespoons clear honey

2 garlic (more if you like garlic.)

black pepper

Baby potatoes

Mix the honey, mustard, the juice from 2 lemons, crushed garlic cloves and black pepper in a shallow bowl.  Taste it and see if it tastes okay, i added more mustard and gralic and i wouldnt have used so much honey.

Make slits in the chicken breast.

Cost the chicken in the mixture and then leave it to marinate for at least an hour in the fridge ( I did leave one lot over night and this was better).

Get out chicken put in a shallow baking tray with baby potatoes and pour the rest of the marinade over the top.

Put in an oven at 200c for 35-40 mins (or untill chicken is cooked)  I basted mine a few times too.

Serve with broccoli.

this came out amazing, even my picky brother ate it!

Well that makes 2 of us.  I went to the doctor's and was told I need to lose 50 lbs and lower my cholesterol, or else!!!!

Here's what he told me.  He suggested I start food and feelings journaling which helps keep me on track.  Go into www.dietspring.com to sign up, and it's FREE.

I'm eating lots of vegetables (not really a favorite), apples, unsalted nuts, margarine with phytosterols, whitemeat chicken and fish and have to drastically cut back on red meat, sweets, fried and processed foods.  I'm also exercising which is NOT a favorite pass time of mine, but I'm doing my best even if it's only walking for 10 minutes a day....

Good luck to the both of us....
