totally sugar free cakes

Does anyone have a recipe for a totally sugar free and nothing in it that turns to sugar cake recpe to share? Parent birthday coming up and he is a heart patient, a kidney patient, and diabetic.  Need to keep all levels lowered and still make a birthday cake he can actually eat. LOL

Hi Lilsarge, You have asked a difficult question. My husband is diabetic 2 but doesn't face all the challenges you listed. There is a wonderful magazine for diabetics and food suggestions appear. You  might see if there is a web site , the magazine is DIABETES FORECAST. My other suggestion would be google or yahoo, sugarless cakes. You might consider calling your local hospital , ask for someone involved in nutition for the menu in the hospital. I wish you good luck, it is a very kind gesture, I hope it works out.

 If you look up dialysis, diabetic or renal in your search engine, you will get alot of national orginizations to ask this question to. There's a lot of information for this. I have 3rd stage chronic kidney disease. There's renal.com also that I look at often. This web site gives me e-letters each week that I signed up for. DaVita.com. You can e-mail them or call them to ask question's. GOOD LUCK!

Hi Lilsarge,


My husband is diabetic as well.  Over the years I have found his favorite Birthday cake is very simple and yet Delicious! I love the cake as well.


1 Pre-made Sugar Free Angel Food Cake (get at any grocery store)


1 Tub- Sugar Free Cool Whip (I get the large one, it is better value)


fresh fruit, we love Peaches, Blueberries, Strawberries, use anything that he loves. If fresh fruit is not an option where you live, canned: drain and wipe off juice with paper towel, frozen, thaw in colander.


 


Slice Angel Food Cake into equal 3rds, horizontal (use a bread knife or seratted knife, will cut with out squishing the cake.)


Slice up fruit thin, place all over the cut layer of cake, top with coolwhip, place 2nd layer on and repeat the fruit and cool whip.  Place top of cake on cover with coolwhip, add fruit to top of that.. If you are also adding candles, cut an X in the fruit that you will be putting a candle in, helps to hold it upright as the coolwhip is not thick like frosting.


I hope this will help in giving you some options, In all honesty, this has become a favorite of mine as well.  Sometimes, I do not layre the fruit, I just mix it in with the coolwhip then frost the cake as usual.
