Low Fat Spaghetti Sauce

I decide to post my recipe as it is meatless, low fat, and fairly easy.  You can make it on stove top or in crockpot.  If you want meat, brown ground beef, drain, and add to it.  OR you can use prepackaged meatballs and add, or use to make meatball subs.  Layer it with cheese and noodles for lasagna.  Or use chicken for parmesan.  It is a versatile sauce.

  • 1 large bell pepper chopped

  • 1 large onion chopped

  • 2 or 3 stalks celery chopped

  • 2 or 3 cloves minced garlic

  • 1 tblsp dried parsley flakes

  • 1/2 tsp Italian seasoning

  • 1/4 tsp red pepper flakes (I use more but I like spicey)

  • 2 bay leaves

  • 1 medium size pinch crushed anise seed(really brings out the flavor)

  • salt and pepper to taste if you use it

  • 2 or 3 jars or cans of favorite meatless spaghetti sauce.( I use Delmonte Chunky Herb and Garlic.  The amount will depend on the size of your pot.)

If using stove top, saute 1st 3 in dutch oven sprayed with olive oil cooking spray for 2 or 3 minutes.  Add the rest, stir, cover and simmer for 1-2 hours.  If crockpot, stir all items together and cook low for 6-8 hours.  Serve over pasta, spagehtti squash, bean sprouts, or what ever you like and top with parmesan cheese.  ldbayou

Hello again.  Well, I goofed again.  My sauce did not turn out as usual yesterday.  When made on the stove top it tastes great.  Last night it didn't.  So skip the crock and use the stove and simmer on low.  I will try again in the crock and see what the problem might be.  ldbayou  OH, HI CateC!!
