Spaghetti Tacos and Spaghetti Pizza
by jillbcooks 10/7/2010 11:36:00 AM

Right now the number two most searched for phrase on Google is “spaghetti taco.” Yesterday, an article about the novel food that is gaining popularity with the Nickelodeon–channel watching tween set appeared in The New York Times. Many other news outlets picked up the story and have been reporting it all day.  Apparently, the television show iCarly has sparked the trend, as a character on the show prepares spaghetti tacos for dinner.  Now as weird as that sounds, I am already familiar with a couple not-too...

Pizza and a Movie Friday
by jillbcooks 8/13/2010 1:31:00 PM

Got plans for this evening?  How about pizza and a movie? We’ve been on a pizza kick recently and have invested in a pizza stone, pans from the restaurant supply store and a wooden peel (a birthday gift from my husband, which he realizes is a gift that will keep on giving).  I wanted to give the new peel a whirl this week and prepared a couple pizzas using leftovers and refrigerator odds and ends, and flour, salt and yeast, which I always have on hand. The first pizza used up the remnants of a taco dinner, with taco sauce topped with leftover seasoned ground beef.  Shredded cheddar cheese, jalapeno slices, onions and tomatoes topped the pie before it wen...

Making Israeli Pickles
by jillbcooks 4/25/2010 10:20:00 PM

I was a part of a cooking event last week on Yom HaAtzmaut, which is Israeli Independence Day.   The celebration often features Israeli food—think of eating all-American foods like hot dogs and apple pie on July Fourth—such as falafel, pita, hummus, and Israeli salad.  The group I happened to be working with made Israeli pickles.  The pickles are small and sour, made in brine and very different from kosher dill pickles.  Here is a great blog post on making Israeli pickles. The pickle...

Pizza Potluck
by jillbcooks 2/26/2009 8:06:00 AM

There is a funky local restaurant in a Minneapolis neighborhood that is known for its “real food,” organic approach.  The restaurant sometimes offers a great dinner deal—their simple, rustic pizzas and a bottle of wine.  While we usually meet up with friends there, we all decided to save our pennies with a pizza and wine potluck.  Here’s the idea: bring a bottle of wine (preferably one already at home) and an interesting pizza to share.  Debating whether or not to make a salad, I split the difference and made Antipasto Pizza.  I started with a refrigerated crust and par-baked it at 400 degrees for 5 minutes.  Then, I gr...

More Resolutions: Eating Out Less
by jillbcooks 1/13/2009 8:42:00 AM

I saw a financial expert on a television show this week who challenged viewers who have debt to avoid dining out at restaurants for a whole month.  Though it may be difficult to believe, American consumers spend over $400 billion dollars a year at restaurants.  For many families, going out to dinner might be a regular activity for relaxing and enjoying time together. I know when I was young, my family loved to go out for dinner.  It always seemed like a special treat. If you have developed a taste for your favorite foods, it might be difficult to stop dining out.  But, eating at home does not mean that you have to forego your restaurant favorites.  There ar...

Hot Off the Grill
by Heidi at Betty Crocker 7/7/2008 2:00:00 PM

Lots of grilling took place this weekend. Luckily for all involved, none of which was done by me. My sister invited me over to have dinner with her family on Wednesday night. They were making pizza on the grill. She used store-bought naan for the crust. And set out...

Shortcut Supper
by Heidi at Betty Crocker 11/7/2007 10:36:00 AM

I generally don’t put much effort into making myself dinner during the week. After all, it’s just me (a sad commentary on my self-esteem, I know). At least two nights a week I whip together a meal using the following method: I spread pizza sauce (I love the squeeze-bottle kind) on a flour tortilla. Then I top the tortilla with shredded mozzarella cheese and pepperoni slices or green olives, depending on my mood. I bake the pizza right on the oven rack about 7 minutes, or until the cheese melts. Viola!—A personal pizza, no delivery guy needed. Another bonus? I only dirty a cutting board, pizza cutter a...
