Use Up Your Tomatoes

I hate throwing away food.  I like to try to use up what I’ve got and view it as a challenge.  I had a couple large tomatoes that were a bit beyond ripe.  I decided to make a simple sauce with them.  It literally took less than five minutes. First I cut the tomatoes in half and squeezed out the seeds.  I roughly chopped the tomatoes and added them to a minced clove of garlic and a half teaspoon of olive oil that I already had working in a pan over medium heat.  I let the tomatoes brown a bit and tossed in a bit of dried basil, red pepper flakes and pepper.  ...

Gnocchi at Last

I got the recipe for the Mascarpone-Sage Sauce when I took a gnocchi-making class at Cooks of Crocus Hill a long time ago. Unlike the gnocchi, it was quick to make.AC basically took care of it while I finished up boiling the gnocchi. So you may (or may not) have noticed that I didn’t write about Valentine’s Day. I’m not against it or anything; I just don't embrace the holiday quite the way Andi does. Truth be told, I spent the evening of February 14 sharing a frozen pizza with a friend.
