Grandson Blake stayed with us for a couple of nights last week while his parents went to the hospital to bring home his new baby brother, Finn. As always when we get a chance to spend time with Blake, we find some time to cook. One morning we used a Tovolo Pancake Pen to make some fun pancakes. Wild Rice Porridge
Sorry about the delay in posting this week! I’ve been traveling this week. I was in Washington, DC for an education event. While there, I attended a breakfast hosted by Senator Al Franken, who represents the state where I live, which is Minnesota.
Among the coffee, juices and pastries was a wonderful delight that perfectly represented the food traditions of Minnesota: Wild Rice Porridge. Wild rice is actually not rice, but a grass with grain heads that are threshed.

Sometimes when Jack and I stay in town on a weekend, we head over to the Panera Bread Bakery-Café, near our home, for breakfast. Their Baked Egg Soufflés are my favorite breakfast to order, and it's hard to choose between the Four Cheese, Spinach & Bacon, Spinach & Artichoke and Turkey Sausage & Potatoes flavors.

Cooking, baking and entertaining is a treat to me and I treated myself to a lot of it over the holidays. For one meal I baked Herb Roast Chicken and Vegetables, homemade dinner rolls, a tossed salad and Apple Crostata for dessert. For another meal I made Herb-Crusted Pork Tenderloin, baked potatoes, Cascadian Farms edemame (green soybeans) and Cranberry Sauce. (I'm always trying to add fruits or vegetables to dishes and get my kids and guests to eat more fruits and vegetables.) I baked Oatmeal Cookies, made peanut brittle and homemade lefse.

If you are taking a road trip this summer and find yourself in northwestern Wisconsin, plan to stop at the Delta Diner for breakfast or lunch. We drove 23 miles from our cabin, through the beautiful North Woods of Wisconsin to arrive at this 1940's era diner—and it was worth the drive.
