Cake Doughnuts – A Special Hanukkah Treat
by jillbcooks 11/30/2010 10:09:00 AM

hanukkah 016 Hanukkah begins Wednesday evening at sundown this year, and end next Thursday at sundown.  Hanukkah is associated with oil, as the story of Hanukkah tells of the victory of the Maccabees over the Greeks.  With their victory, the Maccabees rededicated the Temple in Jerusalem, though there was only enough oil to light the flame in the temple for only one night.  Instead, the lamp burned for eight nights, and was a miracle.&n...

Frosted Chocolate Malt Cupcake Discovery
by jillbcooks 7/29/2010 1:34:00 PM

A week ago we had some guests over for dinner.  I was making Italian and was a bit stymied about what to make for dessert.  I tend to like making themed menus and always get stuck on Italian desserts, my favorite of which is zeppolis, but I was not willing to do the chore of deep frying, plus I needed to make my dessert in advance. Among the guests were two kids—a second and a sixth grader—so I tried to think about what would have been an exciting dessert for me back in the day.  With a little bit of surfing, I came across this recipe for Frosted Chocolate Malt Cupcakes.  ...

Weekly Challenge: 2 Chickens, 5 Dinners and a $25 Budget
by CateC_BettyCrocker_MOD 11/7/2009 10:00:00 PM

As much as I like to be in the kitchen cooking up a storm, there are a few culinary tasks that I dread. One of them is touching and cutting raw meat because sometimes it’s slimy and requires lots of hand washing. So thanks to supermarket convenience, I’ve always bought the pre-packaged and trimmed meat. In fact, the guys at meat counter were kind enough to cut the meat for my Slow-Cooked Hungarian Stew in ¾ inch pieces. But convenience costs a pretty penny. To get the biggest bang for my buck in this week’s challenge, I overcam...

Cheesecake Pancakes
by AndiatBettyCrocker 11/4/2009 10:33:00 AM

Cheesecake Pancakes—REALLY? Members of our staff read about them on the Bettycrocker.com message boards and from the comments on the boards, we learned that they are a new item on the menu at a popular pancake restaurant. They sounded so good to us, we decided to develop our own&nbs...

The Challenge: Pantry-Only Recipes
by CateC_BettyCrocker_MOD 10/31/2009 12:01:00 PM

Okay, I admit it. I am in love with those 10 for $10 deals at the supermarket. I’ve found myself saying on more than one occasion, “I’m sure I’ll need 10 cans of olives sometime or another.”I used to think my family was unnecessarily strategic for having such a well-stocked pantry (Who can think ahead like that?)…until I moved to college and realized the benefits. Since then, I’ve followed in my family’s footsteps and prided myself on having enough food for when I’m feeling creative in the kitchen. When ...

Breakfast for Dinner: Cheap and Satisfying
by jillbcooks 10/2/2009 5:23:00 PM

I was trying to resist going out to dinner tonight and needed a quick at-home meal idea that would satisfy so I could say no to spending money in restaurants.  I am inspired by a blog called Blogging Away Debt to avoid spending money on dining out until my student loans are paid off.  The blog is all about this woman's efforts to pay down her debts.  She write about the choices she has to make and how life can sometimes get in the way of good intentions.  After looking at our household finances last weekend, I have made some decisions about spending and saving and want to stick to them. I have even gone so far as to...

The Challenge: 1 Box of Bisquick (Heart Smart), 5 Dinners, $25 budget
by CateC_BettyCrocker_MOD 9/29/2009 10:53:00 AM

When I was growing up, Bisquick was one-dimensional. When I saw the box it meant one thing – some delicious blueberry pancakes were in my near future. So when this Bisquick challenge was posed, I was ready to see how diverse it can really be. I’ve always considered myself budget savvy when shopping. But unfortunately after adding up last month’s grocery bills, I realized it was just a frame of mind. We spent over $450 for a party of two. That’s absurd. Reality Check! For the sake of this blog and our bank account, it’s time to shop smarter.  With t...

Quick Irish Boxty
by jillbcooks 3/17/2009 8:10:00 AM

If you never heard of boxty, but you like potato pancakes, rosti or latkes, you’ll probably love this traditional Irish potato pancake.  Boxty is like a cross between a pancake and a hashbrown.  Like any basic dough, boxty can be prepared in many ways, from being fried as cakes in a skillet or cooked as dumplings on a simmering stew.  I like mine crispy on the outside and creamy in the middle, topped with a bit of sour cream and chopped crispy bacon.  Most commonly a savory side dish, boxty can also be served with cinnamon sugar as a breakfast treat.  ...
