Watching food being "aged" is not something I recommend, but I do love properly aged meats and cheeses - ever had a good cut of dry-aged beef? Not something you want to look at before it's prepared, but you can't beat the flavor.

Speaking of Betty Crocker and cheeseburgers, one of my favorite cookbooks, had a cheeseburger cake in it. I think it was Betty Crocker for Kids and all of the kids are dressed in 70's Partridge Family outfits and they made a cake look like a cheeseburger. I really wanted to make that cake. Maybe I should make it....The cookbook is on my shelf, next to the bartenders' guides..... AC

This is interesting. I used to work in a deli where we aged salami. It would hang in a walk in fridge for months. Then we would wipe the green off the sides of it with a vinegar soaked towel, slice it up and serve it. I'm not sure why but I do thing hard (old) salami is better than fresh.
