A croustade is an edible container, often holding savory mixtures. This dessert version uses a pie crust as the container and it is filled with fresh summer blackberries, mixed with a little sugar and flour.
Here is the one I made for dinner guests at our cabin. We served it with homemade vanilla ice cream.

DIY Homemade ice cream sandwiches with Chocolate Sauce are the perfect desserts for a warm summer night. They can be made ahead and frozen— just pull them out of the freezer when you are ready to serve them.
When the cookies are baked and cooled, scoop 8 scoops (1/2 cup each) of strawberry ice cream onto a parchment paper-lined cookie sheet.

It's finally summer in MInnesota, and we have gone from trying to stay warm to trying to stay cool. I've just started to look through my recipes for cool summer meals and desserts. My friend Ann (who lives in Manilus, N.Y.) recently sent me an email and in it she wrote, “Ginny and I went to lunch yesterday, to an organic farm restaurant near Auburn. We had the most wonderful lime and fresh blueberry tart for dessert!”
Her note reminded me of the lime tartlets I recently took to our friend’s cabin for dessert. The crusts and filling can be made a day ahead, making them the ultimate summer dessert!

I like tarts better than pies. They are often prettier because they don’t have top crusts, easier to make because you don’t have to flute the crust and you can cut more servings from a tart (12 servings) than from a pie (6 to 8 servings).

Using fondant is a fun way to decorate the tops of cakes and cupcakes in the summer because it doesn’t melt like chocolate glazes will, isn’t as messy and soft as buttercream frosting and it doesn’t have to be stored in a refrigerator like cream cheese frostings.
Our fondant recipe is easier to make than the traditional ones where you have to boil a water and sugar mixture to the soft-ball stage.

What could taste better in the summer than chilled lime-flavored cupcakes with cream cheese frosting? These Key Lime Cupcakes start with a cake mix to which lime-flavored gelatin and Key lime juice are added. After baking, they are poked with a toothpick and a glaze of powdered sugar mixed with Key lime juice is drizzled over the tops. A scratch cream cheese frosting is mounded on the tops and fresh lime peel is added for a tasty and pretty garnish.

In an effort to lighten up for summer, I have been looking through my collections of cookbooks and recipes clipped from magazines and scrawled on scrap paper. I came across a Classic Pillsbury recipe magazine which must have belong to my mom…since it is twenty years old.
When it comes to eating more wisely, I fail miserably if I try to go to extremes and exclude all treats. I do have a sweet tooth, so any feeling of deprivation when it comes to treats, and I will abandon my whole eating plan.
