Edamame Garden Salad
by AndiatBettyCrocker 8/8/2011 4:05:00 PM

Use fresh produce from your garden or local farmers' market for this pretty and fresh summer salad. The edamame adds a nice green color a little protein to an otherwise ordinary side salad. Edamame Garden Salad 1 cup frozen shelled edamame, thawed4 cups baby greens½ cup julienne carrots (from a 10-oz bag)½ cup diced red bell pepper¼ cup cucumber, halved len...

Lettuce Plus Fruit Equals Delicious Salad
by jillbcooks 7/10/2010 10:11:00 PM

I made this salad the other day when I had a friend over to catch up over lunch.  The salad had mesclun mix, sliced strawberries, whole blackberries, shaved onions, poppy seeds and toasted almond slivers.  I made a simple vinaigrette with sweet balsamic.  Salads make entertaining easy.  Toss your greens in your Salad Spinner and your vinegar and oil in your ...

Heirloom Fruits and Vegetables
by jillbcooks 5/26/2010 7:03:00 PM

I am getting excited to see the beginnings of plants sprout in my garden beds.  One of the reasons that I am so excited is that I started and used some heirloom vegetable seeds.  “Heirloom” as it applies to seeds or plants just means growing varieties that have been grown at earlier times, basically “old fashioned” varieties that have gone out of fashion, perhaps because they require extra tending or are not so pretty.  I like to cook with heirloom fruits and vegetables because they are so different looking.  If you’ve ever seen some heirloom tomatoes, they can be deep purple, pink, and even striped.  Here is a picture of a wa...

Get in the Swim Menu
by jillbcooks 4/30/2009 8:30:00 AM

My friend (and former neighbor) Kelly asked me for some food and drink ideas for the party that marks the opening of her neighborhood’s private pool.  She is chairing the event for the first time.  The neighborhood is tight knit and the pool becomes the social center during the summer, especially for kids and moms.  I used to live in that neighborhood and loved to see the kids taking lessons and training for swim meets when I went past the pool.  The pool facility has a very nice clubhouse with areas for eating indoors and on a large patio.  Kelly plans to use the large grills for making hotdogs and hamburgers. She wanted ideas for unfussy salads and memorab...

Day After the Wedding
by AndiatBettyCrocker 8/20/2008 4:35:00 PM

My friend Kathy is a master at cooking for a crowd. She has often had pool parties in their backyard with guests numbering in 50s and 60s – can you imagine? We all bring a dish to share but still, there have been times when we run out of food. Now I know better and usually bring three dishes to share and then I double or triple each one. Kathy recently had a Sunday afternoon party to celebrate the wedding of her daughter.  Many of the guests were from out of town and so I knew that they wouldn’t be able to bring anything. I told Kathy that I’d make four batches of a tortellini salad that would serve around 50 guests. I prepared all of the ingredients in ...

It's Alive!
by Heidi at Betty Crocker 7/14/2008 6:08:00 PM

When I get together with my neighbors for dinner, I’m usually asked to bring a salad. It’s not that the salad I make is unusual in any way—it’s just your basic lettuce tossed with some tomato, bell pepper and green onions—but I always serve it with Julie's Dressing and it seems to be a hit. AC and Luke turned me on to this lettuce, which is grown locally. It’s alive when you buy it; still attached to the roots and everything. It’s cheaper than bagged lettuce and I swear it tastes much fresher. Plus, it lets me use my ...

Artisan Cheeses from Wisconsin
by AndiatBettyCrocker 2/18/2008 9:55:00 AM

Cheese is my favorite food. That's the answer I always give when anyone asks the question of, "If I had to choose only one food, what would it be"? I love all cheeses: the soft ones and hard ones, the mild and stronger flavored ones and the orange colored ones and the blue ones.  Recently, I made a visit to a small store in St. Paul called the ...
