Use Up Your Tomatoes

I hate throwing away food. I like to try to use up what I’ve got and view it as a challenge. I had a couple large tomatoes that were a bit beyond ripe. I decided to make a simple sauce with them. It literally took less than five minutes. First I cut the tomatoes in half and squeezed out the seeds. I roughly chopped the tomatoes and added them to a minced clove of garlic and a half teaspoon of olive oil that I already had working in a pan over medium heat. When it comes to pasta, my husband loves spaghetti. I have to say that it is my least favorite type of noodle. It is messy, hard to eat, and I love chunky sauce, which spaghetti does no favors for. Nuts for Noodles

The colder it gets outside, the hungrier I get. Pasta and bread are the top of my Things-I-Want-to-Eat list. My theory is that it has to do with some sort of primal urge to hibernate, but I don’t have any scientific data on that. As I've (often) mentioned, I don't cook a lot. As a single gal who lives alone, I just don't have much motivation to make myself a meal when I get home from work.
