When the topic of acts of loving kindness arises, food is always part of the discussion. I think that this is so because feeding someone is such a fundamental and essential act. Food is sustenance, and it is directly connected to our survival as human beings. To be without food, or to be forced to loot or steal it, is, to me, a travesty. This is the scary reality in Haiti these days.

When first diagnosed with diabetes, where do you start? Overwhelming, I know. When you come back to reality, you think, "How will I cope? What will I eat?" As I was compiling the first Betty Crocker Diabetes Cookbook, I met a woman who'd been diagnosed with diabetes at 10 years of age, over 40 years ago. As she was in the hospital having tests run, she said to her Mom, "The nurses say I have diabetes, what does that mean?" Her Mom said, "It means our whole family is going to be eating healthier." Wise woman, that's exactly what we recomend, that the whole family adopt a healthy eating and exercise plan, it's better for everyone....

Even though I didn’t realize it at the time, I am grateful that I was responsible for household chores when I was young. My mom still keeps house in a fastidious way, and I try to do the same. In anticipation for holidays, mom would begin cleaning at least a few weeks out, cleaning everything from curtains to cabinets. My sisters and I were tasked with helping mom, and in the process learned how to be thorough about eliminating clutter and creating a healthy and comfortable home. I recently taught a series of healthy cooking classes to employees. A favorite topic was "Cooking from Your Pantry". The idea is that if you keep your pantry well-stocked, including refrigerator and freezer, you'll be able to whip up recipes in minutes, plus these pantry recipes can be served in a variety of ways. This in itself can be a real time-saver, can possibly be part of a dinner for another night. I'm always looking for those short-cuts.
