Last week we had some guests over for dinner, and I helped their teenage son actually make the dinner himself. He had made a list of things to do this summer and the list included learning how to grill and how to make brownies from scratch. Hearing this, I offered to give him a cooking lesson and help him make dinner. As we set about making a menu, he informed me that he cooks all the time, that he makes ramen noodles almost every day. We had the grill going just about all day yesterday. I figured that I would try baking the pie on the grill (note: I used a metal pie plate...I personally wouldn't put glass on the grill). When the lid of a grill is closed, it is basically a large oven. I noticed our grill was at about 375 degrees (there is a thermostat on it) and we were waiting for the coals to come down in temperature to smoke some brisket. I figured in the meantime, I would put the hot coals to use. The pie came out great, and we even wrapped a few pieces in foil and threw them back on the grill to warm when we were ready for them. ...

Looks like we have at least two BBQ contest left for us this year. The first is coming up this weekend. It’s the “Blues, Brews and BBQ Contest” here in Charlotte. Nice and close to home so travel is not an issue. Greg was going to come in from AL but with Hurricane Ike heading towards the Gulf he’s a little too nervous to leave. Mark will come in from Bristol, TN and of course Papa Pig himself had to come in from Florida (probably more to see his grandkids than to cook).

I spent part of my life growing up in South America so the flavors down there really appeal to me. Whether it’s cilantro, or cumin or flavorful peppers … you can always count me in. One of my other passions is making dishes that can be passed or served “Family Style”. I like one big platter / bowl that has everything that you need in it to make a memorable and flavorful meal. I recently watched an episode of Bobby Flay where he was highlighting food from Peru. He created a dish with one of his guests called “Grilled Lomo Saltado”. This story started a dozen or so years ago with my brother and I debating what "All American Favorite" do we put on the grill for the 4th of July. His vote was the all beef hot dog. Mine was a big thick cheeseburger. Back and forth it went until we finally decided to just buy both. No big deal but then an interesting thing happened. As we consumed a few cold beverages that day and watched our "American Favorites" sizzle away on the grill we came up with a crazy idea. Why not combine these two favorites into one monumental meal?
