At the Minneapolis Farmers Market last weekend, we purchased a bag full of very ripe tomatoes and lots of fresh basil to make a large platter of sliced, fresh tomatoes topped with slices of fresh mozzarella cheese and fresh basil leaves--an easy summer salad for a crowd.
With the tomatoes and basil we had left over, I made Creamy Tomato-Basil Soup from the ...

The first thing I heard today on the morning news was about a new food item being served at the Minnesota State Fair called Chicken-Fried Bacon (thick-cut bacon battered, breaded and fried and served in a boat covered with gravy). Why doesn’t that surprise me? Last year, it was chocolate-covered bacon, which was actually pretty tasty. And we all know about and love bacon ice cream and ...

Did you plant a veggie garden this year? If so, you are probably harvesting tomatoes and zucchini by now. But even if you don’t have a garden, you may be buying fresh produce at farmers’ markets or getting lots of fresh vegetables from a CSA.
This Tomato and Onion Tart is delicious and full of fresh tomatoes, onions and zucchini. I recently served it as a vegetarian main dish along with a salad. It also makes a nice...

I hate throwing away food. I like to try to use up what I’ve got and view it as a challenge. I had a couple large tomatoes that were a bit beyond ripe. I decided to make a simple sauce with them. It literally took less than five minutes.
First I cut the tomatoes in half and squeezed out the seeds. I roughly chopped the tomatoes and added them to a minced clove of garlic and a half teaspoon of olive oil that I already had working in a pan over medium heat. I let the tomatoes brown a bit and tossed in a bit of dried basil, red pepper flakes and pepper. ...

We took a few vacation days and spent Memorial Day week at our cabin. During the week, we were invited to a friend’s home for dinner and I volunteered to bring an appetizer that we could enjoy at the beach. It’s quick and easy to make, and colorful too.
Arrange shredded romaine lettuce in a bowl (or on a fish platter!).
Mix sour cream, mayo, and cooked bacon and spoon over the lettuce.
Top with chopped tomatoes...

Kristen with Veggies From Her Garden
There is nothing like a fresh tomato from the garden. They are sweet, juicy and have that wonderful garden-fresh flavor. We are eating them like apples around here because Kristen (Assistant Food Editor) is bringing some in, nearly every day, from her garden. She planted three kinds of tomatoes in the spring: Yellow Pear, Amish Paste and Brandywine. Yesterday, we made BLTs for lunch and today another food editor is planning to make tomato sandwiches with homemade pickle relish and just a little mayo – she is even skipping the ...
