We look forward to hot meals for dinner, this time of the year. One way to get hot meals ready quickly after everyone arrives home after a long day at school or work, is to start them in a slow cooker before you leave for work in the morning. Jason, Katie, Blake and Finn moved in with us last month (while their new house is being built) and now, we need quick, hot meals to serve our family of six every night of the week. These Slow Cooker Reuben Sandwiches were the perfect quick meal for us, one night. Jack and Jason even had leftovers to take to work for lunch the next day....

Do you ever get tired of making the same thing for dinner, week after week? To spice up a weeknight dinner, try this recipe for a delicious Ground Beef Curry. I added a can of garbanzo beans to the originial recipe and we loved it. This curry tastes great reheated and that's just what Jack and I did. After dinner, we packed the remaining servings into microwaveable plastic containers to bring to work and heat for lunch the next day.

I like to cook for a day and eat for a week. Lately, I have been cooking chicken breast and using it to prepare meals in advance. While there are many ways to cook chicken, since I always seem to forget to thaw it (I buy in bulk and freeze it), I have found that the best way for me to prepare it is in the slow cooker. I just put the frozen chicken breasts in the slow cooker, turn it to high and let it cook through, which takes about 4-5 hours. Then, I let it cool briefly before refrigerating it.

With only seven ingredients in this recipe, it was a perfect week-night meal for Jack and me. While the fish was baking,we had time to cook some veggies and make a salad. Our diner was ready in just 25 minutes.

On nights when I have a French class and get home late, Jack sometimes starts dinner for us. This recipe for Tangy Sesame Chicken tastes better than a frozen entrée and costs much less than picking up the same meal from our local Asian restaurant.
