I’m getting ready to leave for a vacation in Italy this week. For me, part of getting for my trip is sampling some Italian recipes I’m been finding online and in cookbooks. Today is the first day back to school for many kids. When they arrive home, they will be hungry but it may be too early for dinner. Here is a great after-school snack that can be stored in the refrigerator, just waiting for your kids to find.

I've been making lots of Italian foods for our meals lately becasue we are leaving for Italy in just 15 days (maybe I"ve ready told you that!). Lasagna is the perfect make-ahead recipe to serve to a crowd because nearly everyone likes it and you don’t need to add much to round out a menu when you serve it, except for a salad and maybe some bread. I couple weeks back, I wrote a blog in response to a conversation happening in the online discussion boards.
