Bacon Is the New Black
by jillbcooks  8/19/2010 11:06:00 AM

In case you haven’t heard, bacon is the new black.  For a while now, food magazines and blogs tout the presence of bacon in all things, even sweets like doughnuts and cookie bars.

I had been thinking about a salad I had at a white tablecloth steakhouse in March.  It was simple enough—a classic wedge—with iceberg lettuce, tomato, blue cheese and Applewood Smoked Bacon.  The bacon was so, so, so good—sort of chewy, sort of crispy, and definitely cooked with something sweet like brown sugar.  I wanted to make some noteworthy bacon to add to a salad.  After some research, I made this recipe for Praline Bacon by Alton Brown.  As you might guess from the photo, it was delicious.
